With college and school back in session, who has time to make themselves dinner after a long day of work, class, and studying?
Being in college, making myself dinner every night is the last thing I want to do after coming home from a tiring day.
I was also brand new to cooking, and usually settled for a bowl of cereal. That put on the Freshman 15 quick. My sophomore year, I decided I needed to figure it out. I needed to learn how to cook for one, and make it healthy or more healthy than cold sugar cereal.
I lost my Freshman 15, and was feeling a lot better about myself sophomore year. I had more energy, and found a new love for cooking. It was also the best way to impress the fellas, if you know what I mean.
We decided to put together a list of our favorite fast and easy, budget friendly, recipes that are perfect for busy college students.
You could easily cut these meals and ingredients in half, or freeze the leftovers and eat another day. It’s like meal prepping but better, because everything is all made and all you have to do is cook it.
Now if only there was a way to keep roommates out of the food.
These are all great recipes to meal plan, and prepare in advance as well. All you need is some roommate proof tupperware and containers, and you are good to go.
Sometimes if I knew it was a busy week, I would even triple it, and put it in the freezer or fridge, and eat it throughout the week, and buy less junk food, or other groceries to make room for my meal prep.
