This no bake thin mint Ritz cracker cookies recipe is one of my favorite chocolate cracker cookie recipe to make this time of year. I swear I eat more recipe using Ritz crackers during the holidays and tons of more treats than any other time of the year.
I tend to avoid the doctor scale during this time too because I more than indulge in all the tasty goodness and don’t need anything weighing me down. Haha pun definitely intended.
Anyways, if you have never make no bake thin mint cookies, then this is a great recipe to make. But it could be dangerous as they are pretty addiciting!
Recipe Ingredient Notes
To make No-Bake Ritz Cracker Thin Mint Cookies, you will need the following ingredients:
- Dipping chocolate or milk chocolate chips
- Mint extract
- Ritz Crackers
- Crushed candy cane topping (or any other topping of your choosing)

How To Make Our No Bake Thin Mint Ritz Cracker Cookies
- Line cookie sheet with wax paper or parchment paper (this makes it easier to transfer cookies to a cool place so they will set up quicker).
- Melt chocolate in a microwave-safe dish, stirring occasionally. We usually microwave the chocolate for 60 seconds, then pull it out and stir. Place back in the microwave for 30 seconds and stir again. Continue at 30 second intervals, stirring each time, until chocolate is completely melted.
- When chocolate is completely melted, stir in ½ teaspoon mint extract.
- Dip Ritz Crackers into chocolate. Tap off excess chocolate. Lay crackers on wax paper.
- You can leave the cookies plain or garnish with crushed candy cane. They are also cute when drizzled with red and green icing.

What is the Difference Between Chocolates?
Chocolates can differ so much from one to the next. You might not have thought there was much difference between dipping chocolate and milk chocolate chips, but in reality they both were invented for different purposes.
Melting or dipping chocolates are meant for that, dipping things in the chocolate. It tends to melt easier and is smooth. However milk chocolate chips are meant to withstand the temperatures of an oven so they take a bit more to melt them down to dipping consistency.
Toppings for Thin Mint Cookies
These no bake Thin Mint cookies are super delicious plain and no topping, but you don’t have to leave them that way. I tend to dress the cookies up more when I am sharing them or serving them at a holiday party.

Storage Suggestions
If you manage to not eat the whole tray of cookies immediately, these (cookie name) store well. Once cookies have completely cooled, here is how you can store them:
- Counter: Store in an airtight container in a single layer for up to 4 days at room temperature.
- Refrigerator: Store in an airtight container in a single layer for up to 7 days in a refrigerator.

Cna these be frozen??
If you use Andes mint chips (by regular chocolate chips) you can skip the mint. I put the crackers in the melted chips, then fish them out with a fork, tapping off the excess, and put them on the wax paper. I like to store them in the freezer, but they don’t usually last that long, anyway. 🙂

I absolutely love Thin Mints so I was anxious to try these. I had them when a client brought them into the salon so I knew they tasted great. I could probably tap a bit more of the chocolate off the crackers, but I don’t mind that they aren’t perfect. I may try to use the Mint chocolate chips or Andes Mint chips next time.. but then I have this whole bottle of mint flavoring.. 😉

Can I make these a few days ahead of time for my family get together? Will they still be yummy, just don’t want them to get stale?
These would work great made ahead and stored in the fridge or freezer to keep them fresh until you’re ready to serve them

We used the same chocolate to drizzle as we did for dipping – just let the cookies set a little before adding the chocolate drizzle and it works great!
Do you use one or two crackers oer cookies? I noticed in the recipe for 24 cookies it says to use 48 crackers so I’m confused
