Pesto Potatoes Recipe

These Pesto Potatoes make the perfect side dish. They are so easy to make and only take a few minutes to throw together. If you are looking for a quick side dish the whole family will love, you need to try these.

One of my favorite sites to find new recipes is Favorite Family Recipes.  They are a four sisters who share family recipes that are easy to prepare and so delicious.  They even have a cookbook!
I was in a side dish rut and knew they would have something my family would love.
These definitely got us out of our rut. They were the perfect side dish and everyone in the family (including the picky eaters) ate it right up. It was the perfect quick and simple recipe.
If you are in need of a few new side dish recipes, this is one I definitely recommend trying out. Pesto lover or not, you will love this dish.

marinate your potatoes:

I love a good potato recipe, but sometimes they can get a little tiring when they all taste the same. These potatoes do not have that issue. They are incredibly easy to make and taste amazing.

If you are a pesto lover, you could also let your potatoes stay in the pesto mixture a little longer, to really give them that extra flavor. I will usually chop the potatoes a few hours in advance (usually in the morning) then place them in a ziplock bag with the pesto sauce, and put it in the fridge.

Then I add the cheese and let them bake.

It totally takes on the pesto flavor and tastes absolutely amazing.

would any potato work for this recipe?

For this recipe, we used russet potatoes, however, really any potato would work for this recipe. I have never made it using sweet potatoes, but I am sure it would be delicious.

I have made this recipe using mini red potatoes and it was absolutely scrumptious. You can also peel the potatoes, or keep the skin on. I like the texture of the skin, so I usually keep it on.

  • 4-5 medium russet potatoes
  • 1 (10 ounce) jar pesto sauce
  • 3/4 cup parmesan cheese


  1. Preheat oven to 450 degrees. 
  2. Scrub (but don't peel) potatoes and cut into large cubes.  Place cut potatoes in a large Ziploc bag. 
  3. Add  pesto sauce to the bag and shake until all of the potatoes are coated. Pour contents out into a baking sheet and spread out evenly. Sprinkle on Parmesan cheese. 
  4. Bake for 25-30 minutes, or until potatoes are golden.

    These got rave reviews from everyone!! I used a lot more homemade pesto and I didn't skimp on the parmigiana reggiano (closer to a cup or more). I also let them marinate in the pesto for close to an hour before baking. Absolutely scrumptious! TY
