Potatoes are always an easy side dish to throw together to add to a meal. With this roasted potatoes recipe, it develops a lot of great flavor from the pesto sauce. And to knock the flavor out of the park, we even make them up ahead of time and throw the potatoes in the fridge to let them marinate even more in the pesto.
Recipe Ingredient Notes
To make pesto potatoes, you need the following ingredients:
- Russet Potatoes: Yukon gold potatoes work great as well. In fact, any potato works.

- Shredded Parmesan Cheese

How to Make Pesto Potatoes
- Preheat oven to 450℉.
- Scrub (but don’t peel) potatoes and cut into large cubes.
- Place cut potatoes in a large Ziploc bag.
- Add pesto sauce to the bag and shake until all of the potatoes are coated.
- Pour contents out into a baking sheet and spread out evenly. Sprinkle on Parmesan cheese.
- Bake for 25-30 minutes, or until potatoes are golden.
Recipe Tip
If you want to enhance the flavor of the potatoes even more, you can throw the bag in the refrigerator for a few hours to marinate. It is not necessary for this recipe, but it will definitely enhance the taste.

These got rave reviews from everyone!! I used a lot more homemade pesto and I didn’t skimp on the parmigiana reggiano (closer to a cup or more). I also let them marinate in the pesto for close to an hour before baking. Absolutely scrumptious! TY
