5 Slow Cooker Freezer Meals in 30 Minutes

I absolutely love spring! Sometimes spring can get busy with ball games, recitals, graduations, and everything else going on!

If you have 30 minutes, you could easily whip up these freezer meals and have almost a weeks worth of food!

Or if you know you are going to have a crazy day, just throw one in the slow cooker and you are set for dinner!


Slow Cooker Ham and Pineapple Sandwiches

Ingredients:

2 lbs ham, fully cooked and cut into small cubes
1 (20 oz) can crushed pineapple
3/4 cup brown sugar
1 medium green bell pepper, diced
1/4 cup onions, minced
1/4 cup Dijon mustard
Hamburger Buns

Directions:

Place all ingredients into a resealable gallon-sized freezer bag. Mix together in bag and zip closed.
When ready to eat, remove from freezer and place in a non stick sprayed slow cooker. Cook on HIGH for 4 hours or LOW for 5 to 6 hours.
Serve on hamburger buns with your favorite cheese. I love Swiss and ham together.
Serve with chips and your favorite side salad. (I love the Dole Salad Kits so I can make a delicious salad very fast!)
 
Makes 6 servings



Slow Cooker Sticky Chicken

Ingredients:
4-5 boneless, skinless chicken breasts (mine were frozen)
1 cup barbecue sauce
1 cup apricot jam or preserves
1 (1 oz) packet dry onion soup mix
2 tablespoons water

Directions:

Place chicken in resealable gallon-sized freezer bag. Pour the BBQ sauce, jam, soup mix and water on top of the chicken.  Mix together in bag and zip closed.
When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on LOW for 6-8 hours.
You can serve this over rice or just on your plate.
 
Serve with frozen corn and your favorite fruit.

Makes 4 to 5 servings

Slow Cooker Pineapple Mandarin Chicken

Ingredients:
4 – 5 Boneless Skinless Chicken Breasts
1/2 of an 18 oz. jar of  Smucker’s Pineapple Preserves (if you can’t find plain pineapple, you can use pineapple apricot)
1/2 of a 20.5 oz. bottle of Panda Express Mandarin Sauce

Directions:
Place chicken in resealable gallon-sized freezer bag. Pour the other ingredients in and  mix together in the bag and zip closed.

When ready to eat, it is best to remove it from freezer and thaw in fridge for 24 hours. But you can cook from frozen straight to the slow cooker. Cook on High 3 to 4 hours.
This is best served over rice.
 
Serve with steamed vegetables (they have the ready to steam ones at your local store)

Makes 4 to 5 servings

Crock Pot Orange Chicken

Ingredients:
4 or 5 Boneless Skinless Chicken Breasts
1 cup Orange Marmalade
1 cup of BBQ Sauce (I used Sweet Baby Ray?s)
3 Tablespoons of Soy Sauce

Directions:

Place chicken in resealable gallon-sized freezer bag. Pour the other ingredients in and  mix together in the bag and zip closed.

When ready to eat, it is best to remove it from freezer and thaw in fridge for 24 hours. But you can cook from frozen straight to the slow cooker. Cook on low 6 to 8 hours or on high for 4 to 5 hours. Shred the chicken when it is done and serve over rice.  (I added some red pepper flakes the on the adult plates for a little kick)
Makes 4 to 5 servings
Serve with steamed vegetables and garlic bread
 

3 Ingredient Citrus Onion Pulled Pork Chicken Marinade

Ingredients:

2 lb Pork Roast
1 bottle of Stubb’s Citrus and Onion Marinade
12 Rolls

Directions:

Place your pork roast into a resealable gallon-sized freezer bag and pour your marinade on top.  Zip your bag closed.
When ready to eat, remove from freezer and place in a non stick sprayed slow cooker. Cook on HIGH for 5 to 6  hours or LOW for 8 hours.  Shred when it is done.
Serve on hamburger buns or rolls with mozzarella cheese on top.
 Serve with chips and your favorite side salad.
 Makes 6 servings


Tips and other suggestions:
-Don’t forget to add Ziploc gallon-sized freezer bags to your shopping list!
-All of these recipes can lay pretty flat, making them easy to stack in your freezer
-They seem to work best in the slow cooker if you can let them thaw in the fridge for about 24 hours before serving them. If you are not able to thaw them beforehand, plan on them cooking for a lot longer in the slow cooker.
-Each of my recipes feeds my family of four (2 adults and 2 kids) for dinner and then we usually have two leftover lunches for the next day. If you are only making food for 2, you could easily split these meals in half.

    You could let it thaw in the fridge for 24 hours and then put it in the crock pot. We have always thawed it first.

    We need to find some recipes that I can prepare in crock pot for two Sr. Citizens, eating one portion each then freezing the rest in small portions for later. I will eat leftovers for a few days, but DH will not. Would any of your recipes help me to accomplish this idea? We are spending way too much money for groceries and eating out too often and that packs on the pounds and makes you spend more money. Winter is around the corner and we don't want to have to go out in the freezing cold no more then we need to. Any suggestions? DH is a meat and potatoes (Pa.Dutch background)but likes a green vegetable to go along with the basics(meat and pototatoes).

    Hi Sarah. I was just looking at your fun blog. I read a little about your diastasis recti. Camille (the oldest of the Six Sisters) has that too. I had never heard of it until Camille got it after her babies. Her husband is a physical therapist and also has a blog and did a post about Camille and diastasis recti.     Hi! Your ideas for quick freezer to instant pot meals are a great ide and plan on making some of your recipes soon. If your recipe calls for meats should we just do a natural release? I noticed that the cooking times for instant pot are included but not whether or not to quick or natural release. TY

    Most are quick release, but know that if they stay in longer on natural release that they are good for a little bit. We'll try to be better at explaining that in our videos and recipes.
