Red Velvet Oreo Sandwich Cookies with Cream Cheese Frosting Recipe

 

I’m typically not a red velvet kind of girl, but thought I better make a festive dessert in honor of Valentine’s Day coming up!  These were so easy and may have made a red velvet believer out of me!

Red Velvet Oreo Sandwich Cookies with Cream Cheese Frosting Recipe

These were so easy and may have made a red velvet believer out of me!
Ingredients
  • Cookies:
  • 1 (15.25 ounce) package red velvet cake mix
  • 2 eggs
  • ¾ cup vegetable shortening
  • Frosting:
  • 1 (8 ounce) block cream cheese, softened to room temperature
  • ½ cup (1 stick) butter, softened to room temperature
  • 2½ cups powdered sugar
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix together cake mix, eggs and shortening until well combined.
  3. The dough will be pretty thick.
  4. Roll dough into balls, making sure they are all similar in size.
  5. Place dough onto ungreased cookie sheet and bake for 8 minutes.
  6. Immediately transfer cookies to a cooking rack.
  7. Cream together cream cheese, butter, vanilla extract and powdered sugar until smooth.
  8. Spread onto cooled cookies and sandwich together.

My husband’s birthday is this Sunday, so we are celebrating his birthday and the Super Bowl at the same time!  Trust me, we will be having plenty of wings, dips, desserts, etc. but I thought I would make something on the healthier side.  These zucchini bites only took a few minutes to prepare and they make the perfect snack or appetizer!

Baked Zucchini Bites Recipe:
(Serves 6)

These zucchini bites only took a few minutes to prepare and they make the perfect snack or appetizer!
Ingredients
  • 2 medium zucchini
  • ½ cup Italian seasoned bread crumbs
  • ¼ cup grated parmesan cheese
  • ⅛ teaspoon black pepper
  • 2 eggs
Instructions
  1. Preheat oven to 475 degrees.
  2. In a small bowl, combine bread crumbs, parmesan cheese and pepper.
  3. In a separate bowl, whisk together eggs.
  4. Dip zucchini slices into the eggs then coat in the breadcrumb mixture.
  5. Place coated zucchini slices on the greased baking sheet.
  6. Bake for 5 minutes, remove from oven and turn over each slice.
  7. Return to the oven for another 5-10 minutes or until browned and crispy.
  8. If desired, serve with ranch dressing.

Creamy Swiss Spinach Dip

I’m not really the biggest fan of vegetables – especially raw. To me, carrots taste pretty much like dirt! I also don’t like spending a lot of time in the kitchen. Luckily, this dip only has 4 ingredients, and it can be thrown together in a matter of minutes. It is perfect for dipping raw veggies (and this way they taste a lot better!). :)

 

 

Creamy Swiss Spinach Dip

I'm not really the biggest fan of vegetables - especially raw. Luckily, this delicious dip only has 4 ingredients, and it can be thrown together in a matter of minutes. It is perfect for dipping raw veggies (and this way they taste a lot better!). :)
Ingredients
  • 1 (8-Oz) package cream cheese
  • 1 teaspoon garlic powder
  • 2 cups Swiss cheese, shredded
  • 9 oz. package of frozen spinach, thawed and drained
Instructions
  1. In a microwaveable bowl, mix together cream cheese and garlic powder until smooth.
  2. Add in the cheese and spinach.
  3. Microwave for 3 minutes.
  4. Stirring every minute, until the cheese is completely melted.
  5. I served with baguette slices, but you can serve it with vegetables, crackers, or your favorite bread.

All of our husbands are gearing up for the Super Bowl. They’ve watched all the playoff games (and highlights), read and re-read all the predictions, and watching pre-game everything. The six of us girls, on the other hand, have been looking forward to the Super Bowl for another reason: the FOOD. I don’t really care who wins, and by how much, but  I do care about what delicious food will be served. It’s all about manly finger foods during the Super Bowl, and these Caribbean Jerk Chicken Wings are the perfect candidate. They are sure to be a touchdown for your taste buds! ;)

Caribbean Jerk Chicken Wings

Ingredients
  • ½ cup Caribbean Jerk marinade
  • 2 pounds of chicken wings
  • 1 cup honey barbecue sauce (I used Sweet Baby Ray's)
  • ¼ cup packed brown sugar
  • 1 teaspoon yellow mustard
  • ½ teaspoon ground ginger
Instructions
  1. In an airtight container or ziploc bag, shake together marinade and chicken wings until wings are entirely coated.
  2. Let the wings marinate in the refridgerator for at least 2 hours.
  3. (I start marinating mine in the morning, until I cook the chicken that night).
  4. Preheat oven to 400 degrees.
  5. Cover a baking sheet with aluminum foil, and lightly spray with non-stick cooking spray.
  6. In a small bowl, combing barbecue sauce, brown sugar, mustard and ginger.
  7. Set aside.
  8. Place chicken sings on the baking sheet, evenly spaced.
  9. Cook for 25 minutes.
  10. Remove the chicken wings from the oven.
  11. Turn them over (I used tongs), and baste them with the barbecue sauce mixture.
  12. Return to the oven, and continue to cook for 7-8 minutes.
  13. Remove them from the oven once more, turn them, baste them, and return to oven for 7-8 more minutes, or until the chicken is no longer pink in the center.

I have been trying so hard to incorporate more vegetables into my meals. Spinach salads are my current obsession, and I have been trying every combination of add-ins you could imagine into my salads! This is by far my favorite combination! It only takes a few minutes to put together. It’s so delicious I forget I’m actually eating something healthy!

Spinach Pretzel Salad

Ingredients
  • 4 cups (16 oz bag) baby spinach
  • 1 cup broken square pretzels
  • 4 strips of bacon broken into small pieces- the precooked bacon
  • ⅛ cup of Feta cheese (or more to your liking)
  • ½ cup fresh mushrooms sliced
  • ½ one red onion chopped
  • ½ cup-3/4 cup poppy-seed dressing
Instructions
  1. Dump your bag of spinach into a large bowl.
  2. Add all ingredients and toss.
  3. Add dressing and toss again
