Whole wheat waffles topped with bananas, walnuts and whipped cream.

- 2 large eggs
- 2 cups whole wheat flour
- 4 teaspoons baking powder
- ¼ teaspoon salt
- 1¾ cups milk
- ½ cup canola oil
- ½ teaspoon vanilla extract
- 1 Tablespoon honey
- bananas, for topping
- walnuts, for topping
- whipped cream, for topping (optional)
- Syrup, for topping

Instructions
- Preheat your waffle maker to medium heat.
- In a large bowl beat 2 eggs on high speed until frothy and bubbly (it takes about a minute).
- Add flour, baking powder and salt then stir to combine.
- Pour in milk, oil, vanilla and honey. Whisk together until smooth.
- Pour 1/4 cup of waffle batter into preheated waffle iron and cook until done.
- Top with additional bananas, walnuts, whipped cream and syrup.

Bananas and nuts are added as the topping along with syrup or whipping cream…..whatever your heart desires. 🙂
LOL! I was thinking the same thing. I was pretty psyched to see a recipe to use up some old bananas. I guess I’ll have to experiment on my own. *sigh*
Is it sometimes hard to mix the eggs and dry ingredients (before adding the wet ingredients)? It seems like my waffles get lumpy. Would it work OK to add the eggs and wet ingredients and then combine with the dry ingredients?
It should work! We have only made it according to the recipe directions. Let us know! 🙂
I added all the wet ingredients to the eggs, mixed, and then added dry ingredients. The batter seemed fluffier to me. The end result tastes good with both methods, but I think they’re even better when combining wet ingredients before adding dry. (…and my 13-month old LOVES the waffles!!)
