If you haven’t noticed by now, I love a good bar cookie. Not only to eat, but I love making them because you don’t have to put sheet after sheet of cookies in the oven. It’s just a one-and-done deal! This recipe is perfect for feeding the masses but will be completely ready in less than 30 minutes. That’s what I call “WINNING”! :

Oatmeal Chocolate Chip Cookie Bars Recipe
This recipe is perfect for feeding the masses but will be completely ready in less than 30 minutes.
Serving people
Ingredients
- 1 cup butter, softened
- 1½ cups brown sugar
- 2 eggs
- 1 Tablespoon vanilla
- 1¾ cups flour
- 2 cups oatmeal
- ¾ teaspoon salt
- ¾ teaspoon baking soda
- 12 ounces milk chocolate chips
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, mix butter and brown sugar together for a few minutes until light and fluffy.
- Add in the eggs and vanilla and mix until thoroughly combined.
- Add the next four ingredients and mix until combined.
- Fold in the chocolate chips.
- Spread cookie dough into an ungreased jelly roll sheet (or large cookie sheet- mine was 15x10x1") and bake for 18-20 minutes.
- Let cool before cutting.

Update to my earlier comment- I made these with organic coconut palm sugar today. You can use it instead of brown sugar and it’s better for you- Dr Oz says so :-). Anyway- these are so good, I halved the recipe because there are only 2 of us and baked it for 22 minutes in an 8×8 pan. Thanks for posting these! I will make them again for sure

What kind of oatmeal did you use?
We used instant quick oats but any kind will work.

My 12 year old made these last weekend. We all loved them so much and can’t wait to make them again. Easy and delicious and the oatmeal makes them seem less sinful!
Can you use rolled Oates.

Either kind of Quaker Oats (or store brand) will work. We used the quick oats.
The only 10×15 cookie sheet I had was dark…so I should have shortened the baking time to ab 15 minutes! Not as lovely as yours, but still delish! This may replace my family fave…Thanks!

Eating these right out of the oven right now–they’re delicious! I used half whole wheat flour and substituted half of the butter for banana, and they’re still incredible. Probably going to eat these for breakfast tomorrow (andeveryday). Thanks!!!
I’ve made these several times now and everybody LOVES them! I’ve found that 1-1/2x the recipe is just right for a big 12×17 pan, perfect for feeding a crowd.

Do these freeze
They will freeze fine in an airtight freezer container. Probably good for up to 30 days if covered properly. But we eat them within the week. They don’t last long around our house! Have a great week!
Do you use parchment paper when baking?
We usually use parchment paper or silpat.
