Black Bean and Corn Salsa
Ingredients:
1 can yellow or white corn, drained (or if you have fresh, that is even better!)
1 can black beans, drained and rinsed
1 can RoTel diced tomatoes and green chilis
1 bunch cilantro, finely chopped
1/2 small red onion, finely chopped
2-3 green onions, finely sliced
1 red bell pepper, finely chopped
2-3 Tbsp lime juice
1 avocado, chopped (I didn’t use an avocado only because I didn’t have one on hand . . .)
1/2 tsp minced garlic
small amount of jalapeno, depending on how hot you like it
dash of cumin
Directions:
Gently mix all together in a large bowl and serve (or, put it in the fridge for a couple of hours like I did . . . amazing!). We just ate this with tortilla chips with our dinner last night, but then today I put it on top of scrambled eggs and wrapped it in a tortilla and it was an awesome breakfast burrito! I have also heard of people using this as a topping for tacos . . . or, it is even yummy enough that you can just eat it right out of the bowl with a spoon!

I have a recipe that is almost the exact same, and I love to eat it on top of carne asada tacos. Amazing!
I love black beans they are so nutritious and full of fiber. I have recently increased my fiber intake and lost 36 pounds. And I have added in so many recipes with black beans because of their high fiber intake. Fiber is so important to your diet especially when you are trying to lose weight. I plan out my meals and track my calorie intake which helps me stay on track.
I make a salsa almost just like this. However, mine doesn’t have avacado or lime juice in it. It has feta cheese in it and it’s all mixed up with a packet Good Seasons Italian dressing prepared. It gets rave reviews every time!
