Black Bean and Corn Salsa

This is the perfect side-dish to all those summer meals! I made this the day before I served it so that all the flavors could marinate really well and it was perfect.

Black Bean and Corn Salsa
Ingredients:
1 can yellow or white corn, drained (or if you have fresh, that is even better!)
1 can black beans, drained and rinsed
1 can RoTel diced tomatoes and green chilis
1 bunch cilantro, finely chopped
1/2 small red onion, finely chopped
2-3 green onions, finely sliced
1 red bell pepper, finely chopped
2-3 Tbsp lime juice
1 avocado, chopped (I didn’t use an avocado only because I didn’t have one on hand . . .)
1/2 tsp minced garlic
small amount of jalapeno, depending on how hot you like it
dash of cumin

Directions:
Gently mix all together in a large bowl and serve (or, put it in the fridge for a couple of hours like I did . . . amazing!). We just ate this with tortilla chips with our dinner last night, but then today I put it on top of scrambled eggs and wrapped it in a tortilla and it was an awesome breakfast burrito! I have also heard of people using this as a topping for tacos . . . or, it is even yummy enough that you can just eat it right out of the bowl with a spoon! :)

Hey girl, your salsa looks so good… I’m so happy you like me, you really like me. I am already a follower of you and your sister’s blog. I wish I lived closer to Utah so we could all get together and create. Thanks for the love.

This looks so yummy! I’m going to try this this week while my hubby is away! He’s boring and doesn’t like yummy foods such as salsa! I know, I know… weirdo! :) Anyhow… thanks so much for stopping by my blog and following me! I am now your newest follower! Look forward to seeing more of you :)

I love black beans they are so nutritious and full of fiber. I have recently increased my fiber intake and lost 36 pounds. And I have added in so many recipes with black beans because of their high fiber intake. Fiber is so important to your diet especially when you are trying to lose weight. I plan out my meals and track my calorie intake which helps me stay on track.

I make a salsa almost just like this. However, mine doesn’t have avacado or lime juice in it. It has feta cheese in it and it’s all mixed up with a packet Good Seasons Italian dressing prepared. It gets rave reviews every time!
