Slow Cooker Cheesy BBQ Chicken Bacon Sandwiches

The next few weeks are jam-packed for our family! This past week, I have had two different TV spots that I (and my sisters) had to prep for, we put in sprinklers in our lawn (because we have been watering by hand for the past year and a half!), preschool graduation, and we are preparing to send my husband over to Bosnia at the end of the week to do some humanitarian work for our church. He will be over there for about 10 days helping fit people for wheelchairs and teaching other health professionals how to do it themselves. It’s a great work to be involved in and he is very much looking forward to it because it will be such an incredible experience! However, it makes life a little bit crazy right now . . .
With all these things going on, I am doing all that I can to just get dinner on the table before the sun goes down. Without my trusty slow cooker, this just wouldn’t happen!
These sandwiches are delicious and so easy to throw together. Make them on a night you know that you are going to be busy . . . you can thank me later. 🙂

Slow Cooker Cheesy BBQ Chicken Bacon Sandwiches

  • 4 chicken breasts (mine were frozen)
  • 1 (16-20 oz) bottle of your favorite BBQ sauce (we love Famous Dave's)
  • 1 lb bacon strips, fully cooked
  • 2 cups shredded cheddar cheese
  • 6-8 large onion rolls/buns


  1. Spray slow cooker with non-stick cooking spray. Place chicken breasts in the slow cooker and pour bottle of BBQ sauce on top of them. Cook on low for about 6-7 hours or high for 3-4 hours. Shred chicken and set aside.
  2. Set oven at 425 degrees. Split onion rolls in half and lay on a large baking sheet covered in foil.
  3.  Put some shredded BBQ chicken on the top of half of the bun
  4. Place 2-3 strips of bacon on top of the chicken and top with a handful of shredded cheese.
  5. Put the baking sheet in the oven and bake for 3-4 minutes (until the cheese is melted and the edges of the bun are golden.
  6. Top with the other half of the bun and enjoy!

  1. OH MY! The picture made me want to lick my computer screen (which judging by the dust on my screen would not be a good idea) but then I saw the recipe included BACON...count me in! I think I know what I'm having for Memorial Day now.
  2. hello. i'm making this for dinner tomorrow night but once i reviewed the recipe, a quick question came to mind. you mentioned that you used frozen chicken... did you thaw it before putting it in the crock pot? or just throw it in there and let it thaw/cook all in one. Thanks for the help!
  3. I just found this, and can't wait to try it. From what I read it can't be any less than fabulous. Just one question. You don't mention the top half of the onion rolls in the prep. Do you just toast the bottoms and all the toppings, and leave the tops of the buns untoasted? I think I would like the tops toasted just a little, but a tried recipe must by tried correctly. Is it better with untoasted tops? Or should I just experiment...of course I should. Sorry to have bothered you. How do I delete this? this the right button?????
