Slow Cooker Teriyaki Chicken Bowls

Teriyaki chicken bowls are one of my favorite things to make! I love the flavor, the veggies, and of course the rice. By using the slow cooker it makes it even easier of a meal to make. 

My kids will even eat of the vegetables because they are coated in the tasty sauce making them not even taste like you are eating healthy food! Plus you can throw it all in the same bowl, mix it up and eat away. 

It even tastes awesome the next day, so if you want to double it, go right ahead! It makes for great leftovers.

How to make this delectable teriyaki chicken breast recipe:

To make this recipe, start by spraying the inside of your slow cooker with nonstick cooking spray. This will help the chicken from sticking to the bottom and help with making clean up even easier! 

Then, after that is done, place the boneless skinless chicken breasts into the bottom of the slow cooker. 

Next, in a medium mixing bowl, add in the chicken broth, teriyaki sauce, brown sugar, and garlic and then whisk everything together until it is well combined. 

Then, pour the teriyaki mixture over top of the chicken making sure all of the chicken is covered in sauce. 

Now, just cover the slow cooker with its lid and have it cook on low for 6-8 hours. 

Once the cooking time has about a half-hour to an hour left, begin making up the steamed vegetables and the rice since these will not be added to the chicken at any point. 

After the chicken has finished cooking, using a fork or a hand mixer, shred the chicken in the slow cooker.

All that is left to do is put the cooked rice in the individual bowls. Then top it with the shredded chicken on and add some of the extra teriyaki sauce from slow cooker and the steamed veggies and you are all set to serve and enjoy!

Ingredients

  • 6 boneless skinless chicken breasts
  • 1 cup chicken broth
  • 1/2 cup teriyaki sauce
  • 1/3 cup brown sugar
  • 3 teaspoons minced garlic
  • 4 cups cooked rice
  • 3 cups baby carrots (steamed)
  • 3 cups broccoli florets (steamed)

Instructions

  1. Place chicken in an even layer in a slow cooker sprayed with nonstick cooking spray.
  2. In a medium bowl, whisk together chicken broth, teriyaki sauce, brown sugar and garlic.
  3. Pour over chicken.
  4. Cover slow cooker with lid and cook on low for 6-8 hours.
  5. Shred chicken in slow cooker, once cooked.
  6. Place cooked rice in individual bowls. Top with chicken, extra sauce from slow cooker and steamed vegetables.

    • We used light brown sugar, but either will work. The rice does not go into the slow cooker. In the ingredients it says cooked rice. You will want to prepare that at the end of the slow cooker chicken cooking time so it will be fresh and warm. The chicken is served over the rice.
  1. This was not good. Chicken was over cooked after cooking on low 4 hours. Three hours would have been plenty. Also, the sauce was very thin; like flavored water. I used the teriyaki sauce recommended in reviews and tried to thicken it with cornstarch but that didn't help. I cook a lot and read reviews when they are available. I tried this because it's simple and sounded good but was very disappointed. I threw this meal away and went out to eat instead. Don't waste your time. I don't write reviews but felt compelled to share my experience with this recipe.
    • Then you did something wrong. This recipe is easy and delicious! Chicken is never dry, and if you dont want runny sauce, add the teriyaki sauce from the bottle instead of the crock pot. I usually dont leave replays either but I can't stand rudeness. There are kinder ways to share your negative opinions!
