Peanut Butter Breakfast Bites

These wonderfully delicious peanut butter breakfast bites are what breakfast dreams are made of for moms and kids! They are super simple to make and everyone LOVES eating them. They are perfectly sweet and simple little breakfast or snack.

Do you have a lot of extra time in the morning to sit down with your kids and eat breakfast with them before they all head out for school, or hop in the minivan? Yeah, me either. These little bites are a great on-the-go breakfast or a yummy and easy peanut butter snacks (my kids love to eat them after school).

That is exactly why I LOVE having this made up and ready for the crazy morning rush. They are literally a grab and go breakfast. Or a pop all the kids in the car and pass the air tight container (I like THESE for in the car) back and let them serve themselves kind of breakfast. 

I am not naive, you probably (maybe) will want to eat something else occasionally, but good thing we have a lot of easy and awesome breakfast recipes to make! Cereal energy balls ingredients:

  1. Cheerios cereal
  2. Crunchy natural peanut butter
  3. Honey
  4. Vanilla extract

  • Large mixing bowl
  • Medium-sized microwave safe bowl
  • Rubber spatula
  • Wooden spoon
  • Aluminum foil

How to make these cheerio balls:

To begin, grab your large mixing bowl and pour in the cheerios into the bowl. 

Then, in the medium-sized microwave safe bowl, measure out the crunchy peanut butter and microwave it for 40 seconds. 

Remove the bowl from the microwave and stir it immediately and add in the honey. Mix the peanut butter and honey together until they are well combined. 

Next, add in vanilla extract to the peanut butter honey mixture and mix it all together. 

Now, pour the peanut butter mix over top of the cheerios in the large mixing bowl. Using a wooden spoon, mix everything together until all of the cheerios are coated with the delicious peanut butter and honey mix. 

Then, using a spoon, scoop out bite sized spoonfuls and place them on a greased sheet of aluminum foil. 

You’ll have to let the bites sit for about 3 hours or so for them to solidify. 

If you want to make this a little bit more like a dessert, you could always make up some homemade hot fudge sauce and drizzle it overtop of the bites! 

TIPS AND TRICKS

  • Feel free to use any kind of Cheerios cereal that you prefer – plain Cheerios, Honey Nut Cheerios, Peanut Butter Cheerios, chocolate cheerios, etc)
  • You could substitute agave syrup for the honey
  • You could substitute almond butter or cashew butter for the peanut butter
  • If you don’t have crunchy peanut butter, creamy peanut butter will work just fine
  • You will want to be sure that you use a natural peanut butter – which means that the only ingredient that is in the peanut butter is peanuts (and maybe a little salt). Peanut butter is sometimes loaded with sugar and other ingredients that aren’t needed for this recipe.
  • If you or your kids prefer bars, you can always pour this mixture into a 9 x13 pan lined with greased aluminum foil.

Ingredients

  • 5-6 cups Peanut Butter Whole Grain Cheerios (can also use plain Cheerios)
  • 1 1/2 cups crunchy natural peanut butter
  • 1/2 cup honey
  • 1 teaspoon vanilla

Instructions

  1. In a medium large bowl, pour the Peanut Butter Whole Grain Cheerios into the bowl.
  2. In a different medium size bowl, measure and scrape out the crunchy peanut butter and microwave for 40 seconds.
  3. Take out, stir, and add the 1/2 cup honey.
  4. Add the vanilla, and mix in until well-combined.
  5. Pour the peanut butter mixture over the Peanut Butter Cheerios and mix together well with a spoon until all the cereal pieces are coated.
  6. Spoon out bite sized spoonfuls and place on a sheet of greased aluminum foil.
  7. Let the bites sit and solidify for about 3 hours.

  1. These look like one of our children's favorite desserts, Cheerio Bars. It is made with cheerios, peanut butter and marshmallows. I'm thinking they will enjoy this one since it is so close. Will these firm up so you can pick them up without getting all messy?
  2. I made these last night and followed the recipe exactly. I was hoping these would be a quick grab and go breakfast. I could not get them to firm up enough to pick them up. I was making them and a friend asked for the recipe. Maybe she can see if hers firm up enough to pick them up. If not, I'm wondering if it can be the difference in humidity?
    • Could be differences in your microwaves. In order for the sugar to reach the point of candied, which is what makes it set up in haystacks as well, the mixture needs to reach a hot enough temperature. Try again but mix your peanut butter and honey in a saucepan and bring it to a simmer or light boil while constantly stirring. (I'm a home ec teacher <3)
      • i had trouble as well. i will definitely try the saucepan method next time. Also, could it be that the type of PB you use matters? i ran out of natural, so i used half natural and half "regular" crunchy PB. I looked at other similar recipes, and a lot of them use almost a 1:1 ratio of PB:honey, and almost half the cheerios. i will keep trying.
      • Ours are cooling now. I used regular creamy peanut butter. I melted it in the microwave. It was already melted when I added the honey and so I did not microwave it again. If ours doesn't set up, I wonder if this is where I may have gone wrong. I should have ran the microwave again to heat up the honey. After reading your comment, I wonder if others have done the same as me.
  3. I was reading the recipe and it didn't seem like they would stay firm and not be messy. I like the idea of adding other ingredients, though a little at a time at the end. And maybe scoop into bakers mini muffin paper cups. I also wonder why mixing the honey and peanut butter would cause it to solidify. There was no response to that issue

    I just made these but with rice crispies as it was all I had on hand. My kids loved making them and love the finished product. Ours set in less than an hour just sitting on the counter, not falling apart or messy at all! Thanks for the idea.
    • You will be fine using regular peanut butter in place of the natural peanut butter. I was just reading over all of the comments on this recipe. I'm hoping that using regular peanut butter will help hold yours together well. It looks like some people had problems and others did not. Ours have always turned out. Best of luck. They are so delicious.

    I just made these. After following the instructions they seemed dry so I heated up more peanut butter. Unfortunately, I think mine may fall apart too. I think the key factor may be the temp of the honey and peanut butter together. It's just not long enough to do 40 seconds and then 30 more. It just doesn't get hot enough.
  6. These sound wonderful. I cannot wait to try. Reading the comments, I feel like an umpire is needed. The bully-ish remarks (that makes one feel bad) are unbelievable. "They fell apart, blah, blah..." Stop it! Think of the author and the time, energy and emotion to share this recipe. Shame on all of you for just being crappy. She shared the recipe, which works for her. Blaming her for "wasting your time, money and ingredients" is ridiculous. Kudos Six Sisters Stuff!!
