Another one of our favorite Instant Pot recipes: Instant Pot Honey Sesame Chicken

I have found that a good pot roast is something I can get my whole family to actually sit down and eat together. Which, in itself is an accomplishment! Plus, the kids actually enjoy eating the veggies in the pot roast, so talk about a double bonus.

If you haven’t used your Instant Pot yet, this is a perfect meal to try it out on. It is super simple, basically foolproof.

However, if at the last minute you chicken out, did you know your Instant Pot is a slow cooker too? Yep, it’s that awesome. I ended up actually donating my original slow cookers since the Instant Pot can do both! I have the Instant Pot LUX 6 Quart 6-in-1 Programmable Pressure Cooker. It’s basically 6 appliances in 1 – pressure cooker, rice cooker, saute, steamer, cake maker, and warmer. It is awesome!

Honestly, I don’t know how I would make it through the week without it now! Okay, that might be a bit dramatic, but you get my point. If you don’t have one yet, that should be on your must-have list.

Let’s begin making this delicious easy family dinner recipe:

To start, get out your Instant Pot and make sure it is plugged in and ready to go.

Then, you are simply going to add in the beef pot roast, one packet of dry onion soup, an onion chopped up, 5-6 carrots chopped up, 6 red potatoes chopped, and the two cups of beef broth into the Instant Pot.

Yes, you are adding everything at the same time!

Now, put the lid on top and turn the knob to the “SEALING” position and press the “MEAT/STEW” button (it will vary based on the model you have) and then set the timer for 60 minutes.

After the hour has passed you are going to do a natural release of the pressure from the Instant Pot. What that means is that you will do nothing, actually. The Instant Pot itself will gradually let the pressure out. Just be prepared as it can take anywhere from 15-20 minutes for this to happen.

You will know the pressure has all been released once the pin drops. After that, remove the lid and take the roast out and cut it into slices. It will be very tender and falling apart at this point.

Then, just remove the carrots and potatoes from the Instant Pot and serve it with the roast.

If you like to have a dinner roll to serve with the roast, you could always pair it with this wonderful butter crescent roll recipe from Taste of home.
