To make our Instant Pot corned beef and cabbage, you need the following ingredients:
- Protein: you will need to use a corned beef brisket which is a flat-cut brisket
- Vegetables: use fresh carrots, chopped onion, and a quarter green cabbage
- Herbs: for the best results use both fresh parsley and bay leaves for added flavor
- Spice packet: this is normally included with the corned beef when you buy it at the grocery store
- Liquid: you will need to use either water or beef broth to ensure this is perfectly juicy and tender meat

How to Make Instant Pot Corned Beef and Cabbage
- Place the corned beef brisket in the bottom of the Instant Pot. Add the baby carrots, onion, parsley, and bay leaves. Sprinkle the seasoning packet on top. Carefully pour in the water down the side (you don’t want to wash away all of the seasoning and flavor by pouring it on top of the beef).
- Place the lid on top of the pressure cooker, move the venting position to SEALING, and press the PRESSURE COOK button. Set timer for 90 minutes.
- You can let the high pressure do a natural release (it should take 15-20 minutes). Remove the lid.
- Add the cabbage wedges in with the food in the Instant Pot and place the lid back on top. Press the PRESSURE COOK button and set the timer for 3 minutes.
- When the timer is done, do a quick release of the pressure.
- Remove the lid, remove the bay leaf, and pull out the beef brisket.
- Slice the brisket against the grain (it should be fork tender) and serve with horseradish sauce, carrots, onion, and cabbage on the side.

Ingredients

- To make this in the slow cooker: Add corned beef, carrots, onion, parsley, bay leaves, spice packet, and water to your slow cooker. Cook on low for 7-8 hours. Add the cabbage to the slow cooker and continue to cook for 2-3 hours, until the corned beef is fall-apart tender. Reaching higher temps (around 185 degrees F) will help break down the fibers in the beef and make it much more tender. Remove bay leaves and beef from the slow cooker. Let the beef rest for about 10 minutes and then serve with carrots, onions, and cabbage.

Would it be possible to add potatoes to this? When would you add them?
We haven’t tried adding potatoes to this recipe! You could add them in to cook with the corned beef, just make sure they’re not chopped too small or they will end up really mushy!
The brisket was delish but the vegetables were “mush”. Did I go too long or are there different pressures?
The beef became so tender so quickly! Such a delicious recipe.
The carrots may cook too quickly if they are smaller, or if you use baby carrots. Using larger, thicker carrots and only halving them (or even leaving them whole) could help, or you could add the carrots at the end and cook them in the Instant Pot with everything for an additional minute to get a more tender-crisp texture.

Can I place the corned beef on a trivet to make removal easier when it’s done? Or does it need to be directly on the bottom of the pot.
