You might even be able to claim these are monster cookie energy bites, except they are in fact no bake monster cookie bars that are set in parchment paper and ready in no time when you need an easy treat to serve your cookie monsters.

Ingredients used to make Monster Cookie No Bake Bars
Cookie
- Salted butter
- Honey
- Brown sugar
- Creamy peanut butter
- All-purpose flour, microwaved for 1 minute, stirring halfway through to kill bacteria
- Vanilla
- Rolled oats
- M&Ms candies
Chocolate Drizzle
- Heavy cream
- Milk chocolate chips

How to make Monster Cookie No Bake Bars
- In the bowl of a standup mixer, beat the butter, honey, sugar, peanut butter, all-purpose flour, and vanilla on high speed for 30 seconds. Add the rolled oats and mix until combined. Add the M&M’s candies and mix until combined.
- Put the milk chocolate chips and heavy cream in a microwave safe bowl. Microwave on high for 30 seconds. Stir. Microwave on high for another 30 seconds. Stir. Repeat until the chocolate sauce is melted and smooth.
- Press the dough into a 9×9 Square pan or 9-inch round cake pan lined with parchment paper. Drizzle the chocolate drizzle over the dough.
- Place the confection in the refrigerator for 1-2 hours or until the chocolate drizzle has solidified.



Storage Suggestions
If you manage to have any leftover Bars + Brownies, these can store well if prepped appropriately. Once they have cooled completely, here is how you can store it:
- Counter: Store bars and brownies in an airtight container at room temperature for up to 4 days. If your kitchen is particularly warm, consider refrigerating instead to prevent them from getting too soft or melty.
- Refrigerator: Place in an airtight container and refrigerate for up to 1 week. Let them come to room temperature before serving for the best texture and flavor.
- Freezer: To freeze, make sure bars and brownies are completely cooled and unfrosted. Wrap tightly in plastic wrap (or Press & Seal) and then place in a freezer-safe bag or container. For easier portioning, wrap individual squares before freezing. Don’t forget to label with the date. They’ll stay fresh in the freezer for up to 3 months.

Why do you need to microwave the flour?
When you are working with flour, generally it is heated up whether it is in the oven or on the stovetop which kills the bacteria in raw flour. However, with this no bake bar cookies you will not be heating up the flour in the slightest.
Before you mix the dry ingredients into the creamy mixture, you need to microwave the flour by itself in order to kill any of the bacteria that might be in the flour. Once you do that, you are ready to go!
