How to Make Our Instant Pot Steak Fajitas
- Begin by getting out your Instant Pot, plugging it in, and pressing the SAUTE button on the Instant Pot.
- Once the panel reads “HOT,” add in the olive oil to the inner pot and let it heat up.
- Prepare your whole flank steak with salt and pepper on each side, and then place the steak into the hot oil and let it sear on each side for 2-3 minutes.
- After the steak has browned on each side, sprinkle half of the fajita seasoning on one of the sides, and then flip it over and use the remaining fajita seasoning for the other side.
- When the steak is done being seasoned, place all of the sliced red, yellow, and green bell peppers, along with the sliced onion and minced garlic on top of the flank steak.
- Now, carefully pour the beef broth into the pot, trying to keep the liquid along with sides of the inner pot to avoid washing the fajita seasoning off the steak.
- Next, place the lid on the Instant Pot, turn the valve to the SEALING position, press the MANUAL or PRESSURE COOK button and set the timer for 10 minutes.
- After the 10 minutes has run out, allow the Instant Pot to do a natural release of the pressure for 15-20 minutes.
- When the steak is done with the natural release, turn the valve to the VENTING position if the pin is still up to release any remaining pressure from the Instant Pot.
- Then, use a slotted spoon to remove the veggies and flank steak from the Instant Pot, placing it on either a serving try or a cutting board.
- Carefully slice up the flank steak (be careful as the steak will still be hot) and then serve the steak along with the veggies, tortillas, and all the delicious fajita toppings. For extra flavor, use a ladle to take the juice from the Instant Pot and drizzle it over top of the steak and veggies!
Recipe Notes
While the cook time in the Instant Pot is only set for 10 minutes, you do need to account for the time it takes to prepare the steak before you start to pressure cook, along with the time for the Instant Pot to come to pressure and then the time needed to do a natural release of the pressure inside the pot.
While you’re only setting the Instant Pot for 10 minutes, you will need 5-6 minutes for browning the meat, along with about 20-25 minutes for the Instant Pot to come to pressure and then the 15-20 minutes for natural release. So, if you plan to make this recipe, make sure you have at least 55-65 minutes to make this delicious meal. Don’t worry, I promise it is worth the time!
Toppings we like for our fajitas include the following: salsa, guacamole, freshly chopped cilantro, sour cream, shredded cheese, black beans, rice, or refried beans.
Tenderizing Meat
There are three big factors to getting tender fajita meat.
- Meat Type: By using the flank steak you will be able to get nice pieces of meat that will melt in your mouth. You can also use skirt steak as well. Also be sure to keep the meat whole while it cooks to keep the juices from coming out!
- Seasoning: By seasoning the meat with salt, pepper, and the fajita seasonings you are setting up the meat for great flavor.
- Cooking Method: You will want to be sure to sear the outside of the meat at a high temperature. This helps the meat seal in all of the flavor that you are adding. And then when you pressure cook the meat you are helping the flavor penetrate the meat on another level building up the most tender and flavorful piece of meat.

I am definitely going to try this. If I wanted to add frozen small shrimp also, do I just add them in before I start the pressure cooker? Thanks!
If the shrimp are cooked, you could add it to the hot food after the pressure has been released. It should heat through quickly.
Can I freeze ahead of time? How would I do that? Thanks!
If you want to freeze this I would cook the recipe first, allow to cool then freeze in a ziplock bag for up to three months
Such an easy meal to make on a busy night! Kids and husband loved the beef.
