Season both sides of the flank steak with salt and pepper.
Brown the flank steak on one side in the hot oil for 2-3 minutes, then flip it over and brown it on the other side for 2 minutes more.
Sprinkle half of the fajita seasoning on one side of the flank steak, then flip it over and sprinkle the other half on the other side.
Place all the sliced peppers, onions, and garlic cloves on top of the meat.
Carefully pour in the beef broth (try to pour it on the side of the Instant Pot so that it doesn't wash the flavor off of the steak).
Place the lid on the Instant Pot. Set the timer for 10 minutes. When the timer is done, let the flank steak do a natural release for at least 15-20 minutes.
Use a slotted spoon to remove the veggies and flank steak. Slice up the flank steak and then serve steak and vegetables on tortillas with your favorite fajita stoppings. You can also drizzle some of the flavorful liquid in the Instant Pot on top of your steak and vegetables for more flavor.
Notes
While the cook time in the Instant Pot is only set for 10 minutes, you do need to account for the time it takes to prepare the steak before you start to pressure cook, along with the time for the Instant Pot to come to pressure and then the time needed to do a natural release of the pressure inside the pot. While you’re only setting the Instant Pot for 10 minutes, you will need 5-6 minutes for browning the meat, along with about 20-25 minutes for the Instant Pot to come to pressure and then the 15-20 minutes for natural release. So, if you plan to make this recipe, make sure you have at least 55-65 minutes to make this delicious meal. Don’t worry, I promise it is worth the time!Toppings we like for our fajitas include the following: salsa, guacamole, freshly chopped cilantro, sour cream, shredded cheese, black beans, rice, or refried beans.
