
Do you buy bananas with the intention of eating good, or even making some delicious smoothies, and then life happens? Yeah me too. Unfortunately, that means too many tasty bananas end up in the trash.
Well, with this easy and delicious chocolate brownie recipe, you can use those bananas instead of throwing them away and get a tasty treat! Plus, when I add fruit into my dessert I always feel a little healthier. Hahaha.
Also, if I add in bananas or any other fruit to a dessert at least then they are getting some fruit in! Sometimes I have to pick my battles and I consider it a win with these fantastic brownies with bananas. (Most of the time they don’t even know they are eating fruit when I do it.)

To make Chunky Monkey Brownies, you will need the following ingredients:

- Eggs
- Brown sugar
- White granulated sugar
- Salt
- Vanilla extract
- Flour
- Baking soda

How to make Chunky Monkey Brownies
- Preheat oven to 350℉.
- Spray a 9 x 13 inch glass pan with non-stick cooking spray. Set aside.
- Combine butter, eggs, brown sugar, sugar, salt, and vanilla until well blended.
- Add in flour, baking soda, mashed banana, and 2 cups of chocolate chips.
- Spread batter evenly into the prepared pan.
- Sprinkle ½ cup chocolate chips over the top of batter.
- Bake for 30-35 minutes or until golden brown and toothpick inserted comes out clean.
- Cool completely and cut into bars.

Storage Suggestions
If you manage to have any leftover Bars + Brownies, these can store well if prepped appropriately. Once they have cooled completely, here is how you can store it:
- Counter: Store bars and brownies in an airtight container at room temperature for up to 4 days. If your kitchen is particularly warm, consider refrigerating instead to prevent them from getting too soft or melty.
- Refrigerator: Place in an airtight container and refrigerate for up to 1 week. Let them come to room temperature before serving for the best texture and flavor.
- Freezer: To freeze, make sure bars and brownies are completely cooled and unfrosted. Wrap tightly in plastic wrap (or Press & Seal) and then place in a freezer-safe bag or container. For easier portioning, wrap individual squares before freezing. Don’t forget to label with the date. They’ll stay fresh in the freezer for up to 3 months.
