Happy Memorial Day. We are celebrating by having family over (which is a big deal since I live in Texas) and going camping.
We make these Baked S’mores Banana Boats a few weeks ago and now we are going to make them every time we go camping. (Quick Tip- if you want our marshmallows a little more golden brown (and you are at home) you can broil them until desired color.)
They only require a few simple ingredients, and I feel a little better feeding them to my family, knowing they are getting some fruit and potassium in their bodies.
If you need a new summer dessert to eat over the campfire this year, this one is definitely recommended.
what banana ripeness works best for this recipe?
For this recipe, I usually use my bananas that are starting to get some dark spots on them. I personally don’t love the flavor of an all brown banana.
I think it is a little too bitter. I also think when it has green on the ends, it is also a little bitter.
I like them perfectly yellow, and just starting to get over ripe, with brown spots, when I make this recipe.
You can make them with whatever banana ripeness you desire, but I personally think when they are perfectly ripe and yellow, they are best.
add your favorite toppings:
For this recipe, I love the classic S’more toppings and combination. I love the Golden Grahams, with the chocolate and the marshmallows.
However, feel free to switch it up and make it your own. Here are a few favorites we like to add or replace:
- peanut butter chips
- white chocolate chips
- teddy grahams
- Graham Crackers (crumbled)
- Vanilla Wafers (crumbled)
- peanut butter drizzle
- raisins
- craisins
- strawberries, blackberries, blueberries, etc.

Campfire S’mores Banana Boats Recipe
Ingredients
- 4 bananas
- ½ cup chocolate chips
- ½ cup mini marshmallows
- ½ cup Golden Graham's Cereal crushed
Instructions
- Cut 4 (12-inch) sheets of foil.
- Make deep lengthwise cut along inside curve of each banana, being careful not to cut all the way through. Open slit to form pocket.
- Fill each banana with 2 tablespoons chocolate chips, 2 tablespoons marshmallows and 2 tablespoons cereal.
- Wrap each banana in foil, making sure that foil opening is on top. Using tongs, set wrapped bananas in coals of campfire; cook 8 to 10 minutes. Carefully remove from fire; peel back foil. Or if you are making them from home, Preheat your oven to 350 degrees. Place your foil wrapped bananas on a cookie sheet and cook them for about 8 to 10 minutes.
