For our BBQ chicken salad sandwiches recipe, I love to eat these sandwiches using hamburger buns, but you can also use your favorite buns or rolls. Either way it is going to be super delicious and refreshing
It is a great recipe that you can make for your next get together as it is super easy to make and can feed a good amount of people. You can also double the recipe depending on how many people will be eating, or save some for leftovers for the next day. This pulled chicken salad mix is also super tasty on a fresh bed of spring lettuce or spinach if you want to forego the bun completely.
Another nice thing is that you do not have to make all of the ingredients for the shredded chicken sandwich at the same time. Sometimes I like to prepare the shredded chicken the day or night ahead so that way I can cut out the waiting time for the chicken to cook and cool down.

- Boneless, skinless, chicken breasts
- Chicken broth
- BBQ sauce
- Mayonnaise
- Onion, finely chopped
- Celery
- Salt
- Crushed red pepper flakes
- Hamburger buns or rolls
- Tomato slices (optional)

How To Make BBQ Chicken Salad Sandwiches
- Place chicken breasts in bottom of Instant Pot. Add in chicken broth.
- Place lid on top of Instant Pot, move valve to SEALING, and press PRESSURE COOK button (or MANUAL button). Set timer for 18 minutes.
- When timer is finished, move valve to VENTING and do a quick release of the pressure.
- Remove chicken and shred using 2 forks. Place shredded chicken in a large mixing bowl and toss with BBQ sauce.
- Cover bowl with plastic wrap and refrigerate until chicken is cooled.
- Add mayonnaise, onion, celery, salt and pepper flakes to chopped chicken; mix together. Serve on buns or rolls with tomato and lettuce.
