The whole family is going to enjoy this super delicious Slow Cooker Cheesy Chicken and Rice made with tender chicken, and simple ingredients that you can find at the grocery store or have on hand.

You won’t even need any chicken broth or chicken stock for this great recipe and it will still be super flavorful.
This is very similar to rice casserole but made in a slow cooker. It truly is one of our favorite recipes for a slow cooker chicken recipe.

Ingredients used to make Slow Cooker Cheesy Chicken and Rice:

- Boneless, skinless chicken breasts
- Onion diced
- Green bell pepper diced
- Cream of chicken soup
- Zataran’s Yellow Rice Mix (or your favorite yellow rice)
- Shredded cheddar cheese
- Whole kernel corn drained
- Green onions diced, optional garnish
How to make Slow Cooker Cheesy Chicken and Rice:

- Spray slow cooker with non-stick cooking spray. Place chicken in the bottom, then top with diced onion and green pepper. With a wooden spoon, spoon soup on top of vegetables and place lid on top of slow cooker.
- Cook on low for 5-6 hours or on high for 3-4 hours.
- While chicken is cooking, prepare rice as directed on package.

- After the cooking time, remove chicken from slow cooker and shred using two forks. Return shredded to chicken to slow cooker, then add in cooked rice, cheese, and corn. Mix all together and serve.

Slow Cooker Cheesy Chicken and Rice Recipe
Ingredients

- 8 ounces Zataran's Yellow Rice Mix, 1 box, (or your favorite yellow rice)
- 1 cups shredded cheddar cheese
- 15 ounces whole kernel corn, drained, 1 can
- green onions, diced, optional garnish

Just checking on the Zatarain’s rice mix – recipe says an 8-ounce box but the link says the boxes are 6.9 ounces?
Hi Bethany, it actually comes in both sizes. Either one will work just fine. Just prepare the rice according to package directions.
This is too dry for me with just one can of soup so we added another one plus some milk.
Sorry Pat. Not sure what could have gone wrong. We had this just last week and no problems at all. After shredding the chicken, did you add it back into the soupy mixture in the slow cooker? (Don’t drain the soupy mixture from the slow cooker) Did you make the rice according to package directions before adding it at the end? Ours is very creamy. Not sure what could be the problem.
So in the picture it’s very clear that it’s green onions on top and no green peppers in sight, but the recipe says to add green peppers…
It also says “optional” on the green peppers
Can the chicken breasts be a little frozen?
It is fine if they are partially frozen.
I’m wondering if this would freeze well? After I make it I though maybe I could portion of out and freeze for later.
This recipe should freeze well in an airtight freezer container.
The instant pot version seems creamier and includes peas & green beans. Can this version be made with the extra veggies? Should I add another can of soup to make it creamier? Thanks!
You could definitely add in more veggies. And yes, I would add in more soup/liquid to make it a little more creamy like the instant pot version. 🙂
