Roasted Balsamic Carrots

I’ve never been a huge fan of vegetables, but carrots of any kind are something that I can actually swallow! These Roasted Balsamic Carrots are probably one of the easiest side dishes I have ever come across, and they taste absolutely amazing! These would be perfect dinner table as a vegetable your whole family will love!

  • 1 (16 ounce) bag baby carrots
  • 2 Tablespoons olive oil
  • 2 Tablespoons balsamic vinegar
  • salt and pepper to taste


  1. Preheat oven to 450 degrees. Pour bag of baby carrots into an 8x8" pan. Drizzle half of the olive oil and all of the vinegar over the carrots. Stir them around so all of the carrots are coated. Sprinkle salt and pepper over the carrots and cook for 15 minutes.
  2. Stir the carrots and add the other tablespoon of olive oil and cook for 10-15 more minutes, or until the carrots start turning a little brown around the edges (you may want to cook for a little longer if you prefer your carrots to be softer).
