Chicken Taco Roll-ups

I love tacos, but I also love finger food. The best of both worlds have combined and I have created Chicken Taco Roll-Ups. These are perfect as an appetizer, lunch, or side dish. You are going to love this simple and delicious finger food.

I am always looking for new lunch ideas because I get so sick of salads and sandwiches, but have no time to cook something delicious.

This is a yummy, easy recipes that takes just minutes to whip up. And it’s pretty healthy too so I don’t feel gross after eating it, and it keeps me full on busy days.

With some big game days coming up, my husband has already requested this recipe. I’m not mad because it’s inexpensive, simple, quick, and delicious.

Whether you are making these for lunch or as an appetizer or snack, you are going to love how simple and delicious they are.

how could i make these more healthy?

These roll ups could be a lot worse, however, they could also be better for you, nutrition wise. If you are looking to make this recipe more healthy, here is what we recommend:

-Use wheat or spinach tortillas, in place of the white flour or corn tortillas.

-Use plain Greek yogurt in place of the cream cheese. This will make the filling a little more runny, so you could add more chicken.

You could also use a 1/3 less fat cream cheese, or do half cream cheese, half plain Greek yogurt.

-Add more veggies. We love adding new veggies to our wraps. We add celery, small carrot shreds or bits, zucchini, cucumbers, etc.

You could throw in any of your favorite vegetables.

Chicken Taco Roll-ups

Ingredients

  • 3 chicken breasts (shredded)
  • 1 -8 oz. package fat free cream cheese
  • 1 cup Mexican cheese
  • 1/3 cup salsa
  • 4 green onions
  • 1/2 avocado (diced)
  • 2 tablespoons taco seasoning
  • 1 teaspoon garlic
  • 1 teaspoon garlic salt
  • Salt and pepper to taste
  • 4 tortillas

Instructions

  1. In a bowl, mix together, the shredded chicken, cream cheese, Mexican cheese, salsa, and onions with a hand mixer.
  2. Add the diced avocado, taco seasoning, and garlic, garlic salt, salt and pepper, and mix at a slow speed.
  3. Spread a thin layer over a tortilla and roll the tortilla up.
  4. Cut into 1 inch bites.
  5. Refrigerate until ready to serve.
