I make them at the beginning of the week and we eat them for snacks, lunch, and even dinner. They take minutes to throw together, and a great way to sneak vegetables in your kids.

How to Make Chicken Pinwheels
- Cover an entire side of each tortilla with spreadable cheese.
- Layer sliced chicken breast, lettuce, cucumber slices, and tomatoes on each tortilla.
- Roll up, and cut into 1 inch slices.

- Hummus is full of protein. It is a perfect, dairy-free alternative to spreadable cheese.
- Plain Greek Yogurt can be used similar to sour cream. They have similar flavor and texture. Plus, my kids cannot tell the difference.
- Ranch is always a favorite sauce. If you are looking for a healthy ranch alternative, combine ranch dressing mix with plain Greek yogurt.
- Salad dressing, such as vinaigrette, can be added instead.
