How to Make 3-Ingredient Pumpkin Chocolate Chip Cookies
- Preheat oven to 350 degrees F.
- Mix all ingredients together, roll into small balls and place on a cookie sheet.
- Bake for 8-10 minutes.

Recipe Modifications
You can use any kind of chocolate chip in this recipe. We prefer milk chocolate, but semi-sweet, white chocolate, mini chocolate chips, or caramel chips taste great.
If you can’t find spice cake mix, you can use white, vanilla, or yellow cake mix instead. You’ll want to add two teaspoons of pumpkin pie spice to give it that spice flavor!
Storage Suggestions
These 3-Ingredient Pumpkin Chocolate Chip cookies are delicious as leftovers. Once cookies have completely cooled, here is how you can store them:
- Counter: Store in an airtight container in a single layer for up to 4 days at room temperature.
- Refrigerator: Store in an airtight container in a single layer for up to 7 days in a refrigerator.
- Freezer: You can freeze precooked cookie dough for cookies later. Just roll out and freeze for 30 minutes, and then transfer to an airtight, freezer safe bag for up to 3 months. To store cooked cookies, let them cool completely before you put them in a freezer-safe bag for up to 3 months.

Wow so easy! And I love pumpkin!! Yum!
I make these all the time. so good and healthy!
Thinking that the cops would like this for Laconia Bike Week next week (the NH Veterans Association hosts the breakroom they use during that time and we bake for them). I like this, it looks different and very tasty.
instead of chocolate chips wonder if i could use rasins. . ?
I just took the last batch out of the oven!! These cookies are wonderful!! Perfect autumn treat for the grandchildren!! Super easy and simply delicious.
These cookies are good but the banana flavor is very light…..you can hardly taste it. Its more like a “cakey” normal chocolate chip cookie. Nice way to get rid of some rip bananas but you can hardly taste them. Easy to make……..
Could this be made with a gluten free cake mix to make these gluten free? i am new to gluten free baking and love pumpkin. thanks Sheila
Hi Sheila. I tried to do some research on the internet before answering this question. From what I read and from looking at gluten free recipes, it looks like this recipe will work with a gluten free cake mix. You may need to add a minute or two for cooking time. Just watch them closely after 10 minutes. Let us know how it all turns out.
Do you put the ingredients that are called for when making the cake (I.e., eggs, oil, water, etc…) or just the pumpkin, spice cake mix, & chocolate chips?
Just add the 3 ingredients listed in the recipe. Don’t make the cake mix according to package directions.
Banana?? There’s no banana in the recipe
I couldn’t find spice cake mix at the grocery store. Would gingerbread cake mix be an ok substitute?
It should work fine. Just be sure the ounces in the cake mix are the same.
If you csnt find a spice cske mix,use a yellow csje mix and add up to 1 Tablespoons of pumpkin pie or apple pie spice mix. Or your own combination of cinnamon, allspice, ginger & cloves.
If I want to make brownies instead of cookies how long do I bake CV it for and at what temperature?
I’ve made these twice. They are so delicious but I’m not happy with the looks of them. I can’t roll them into balls like the recipe states because my batter is like wet glue & sticks all over my fingers. So I use a teaspoon & spatula to drop them but then have all little points sticking out of each cookie. I don’t know why this is happening! Help!
Very fast and easy to make! I used dark chocolate chips, which may have been a little too unsweetened for some, but it makes about 4 dozen bite sized cookies, using a small cookie scoop. Thanks!
This sounds really good!, Been trying to find spice cake mix in my area, ( South central Ks.) (45 min. south east of Wichita) ,,, cannot find at my walmart or store, all sold out
YUMMMMM I will have to remember this one , my area was sold out of spice cake mix, this is doable lol Thanks!
I saw this recipe but had 1 egg. Why did you leave the egg out?

This was very easy to whip up, they tasted delicious and soft! I might heat in the airfryer to see if I can get them a little more firm.
