White Chocolate Reese’s Muddy Buddies Recipe

My family loves Muddy Buddies, but I thought it was time we tried something a little different!  I love Reese’s and white chocolate, so I knew the combination would make the perfect snack.  They were delicious!  I had to throw half the batch away to keep myself from eating them all day while my husband was at work.  They are that addicting!

White Chocolate Reese’s Muddy Buddies Recipe:
Ingredients:
9 cups Rice Chex Cereal
3 cups White Chocolate Reese’s Miniatures (1 small bag)
1/4 cup butter
1 teaspoon vanilla extract
1 1/2 cups powdered sugar
1/2 cup Reese’s Pieces
Directions: 
Measure cereal into a large bowl and set aside.  In a microwavable bowl, microwave peanut butter cups and butter on high for 1 minute then stir.  Continue to microwave and stir your peanut butter cups and butter in 30 second increments until it can be stirred smooth.  Mix in vanilla.   Pour mixture over cereal, gently stirring until evenly coated.  Pour into a large, resealable plastic bag.  Add powdered sugar and seal bag closed.  Shake until well coated.   Spread coated cereal onto waxed paper to cool.  Sprinkle Reese’s Pieces on top.  Store in an airtight container.

Pumpkin Coffee Cake with Brown Sugar Glaze Recipe

Nothing beats a tasty pumpkin treat in the Fall!  I couldn’t wait until it started cooling down before I started whipping out the pumpkin recipes.  We liked this cake so much, we ended up eating it straight from the pan!  What can I say?  We love our pumpkin!


Pumpkin Coffee Cake with Brown Sugar Glaze Recipe:
Ingredients:
1/3 cup water
1 (15 ounce) can pureed pumpkin (not pumpkin pie filling)
2 eggs
1 tablespoon vanilla
2 teaspoons pumpkin pie spice
1 (18 ounce) box yellow cake mix
1 teaspoon baking soda
1/2 cup brown sugar
1/2 cup all purpose flour
4 tablespoons butter, melted
Directions:
Preheat oven to 350 degrees.  In a large bowl, mix water, pumpkin, eggs, vanilla, and pumpkin pie spice.  Mix in cake mix (just the dry mix, not the ingredients listed on the box) and baking soda and mix until combined.  Pour batter into a greased 9×13 baking pan.  In a small bowl, mix together brown sugar, flour and melted butter.  Sprinkle over the top of the cake.  Bake for 25-30 minutes or until an inserted toothpick comes out clean.  Serve your cake when warm or cooled to room temperature.

Crunchy Baked Chicken Recipe

I love fried chicken, but I don’t love all the extra calories and fat that come with it.  This chicken is so crisp on the outside and juicy on the inside that you just might think you are eating fried chicken.  It is full of flavor and our whole family devoured it!

 

Crunchy Baked Chicken Recipe:
(Serves 4-6)
Ingredients:
1 egg
1 tablespoon milk
1 (2.8 ounce) can of french-fried onions, crushed
1/2 cup grated Parmesan cheese
1/2 cup dry bread crumbs
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
4-5 chicken breasts, cut up
1/4 cup butter, melted
Directions:
In a shallow bowl, whisk together egg and milk.  In another bowl, combine the crushed onions, cheese, bread crumbs, paprika, salt and pepper.  Dip chicken in the egg mixture, then roll in the onion mixture.  Place coated chicken pieces in a greased baking dish.  Drizzle melted butter on top of chicken.  Bake, uncovered, at 350 degrees for 50-60 minutes or until cooked thoroughly.

Peanut Butter M & M Cookies


I am such a chocolate and peanut butter junkie and these cookies hit the spot when I was looking for a yummy treat (I must admit- I probably ate tons more dough than I did actual cookies! We are actually big cookie dough fans in our family. When we were growing up, my mom would save my dad a blob of cookie dough when she made cookies so that he could have a little bite of dough when he got home from work. Is that true love or what?!)!
Peanut Butter M & M Cookies
Ingredients:
1 cup (2 sticks) butter
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 1/2 cups peanut butter (creamy or chunky)
2 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon vanilla extract
1 medium-sized bag of M & M’s (I used plain, but peanut butter would be awesome!)
Directions:
Mix butter, sugar and peanut butter together.  Add eggs, flour, baking soda and vanilla extract. Fold in bag of M & M’s. Roll dough into 1 inch (or a little larger) balls and place on ungreased cookie sheet.
Bake at 350°F for about 10-12 minutes or until golden brown.
Makes 3-4 dozen cookies (depending on how large you roll your cookies).
