This has been my “go to salad” for a long time. We have it every other week or so and we still love it! This recipe makes so much I usually have it for lunch a couple of times. This is also the salad that I bring to potlucks or big dinners – it really feeds the masses!
Simple Southwest Salad Recipe
A simple and delicious salad that feeds a crowd
Serving people
Ingredients
- 1 bag baby spinach
- 1 bag romaine lettuce, chopped
- 1 can corn, drained
- 1 can black beans, rinsed and drained
- ½ can olives, chopped
- ½ cup shredded Mozzarella cheese
- 1 tomato, chopped
- 1 avocado, diced
- ¼ cup sliced almonds, (optional)
Instructions
- Throw all ingredients together in a large bowl and mix well. Serve with your favorite dressing.Want to make it your main dish? Just add some chopped chicken!

I love Italian dressing! But my most favorite is olive garden’s dressing that you can buy at Sam’s Club.
