Healthy Meals Monday: Simple Southwest Salad

This has been my “go to salad” for a long time. We have it every other week or so and we still love it! This recipe makes so much I usually have it for lunch a couple of times. This is also the salad that I bring to potlucks or big dinners – it really feeds the masses!

  • 1 bag of spinach
  • 1 bag of romaine lettuce
  • 1 can of corn, drained
  • 1 can of black beans, rinsed and drained
  • 1/2 can of olives chopped
  • 1/2 cup shredded mozzarella cheese
  • 1 tomato chopped
  • 1 avocado chopped
  • 1/4 cup of sliced almonds (optional)


  1. Throw all ingredients together in a large bowl and mix well. Serve with your favorite dressing.
  2. Want to make it your main dish? Just add some chopped chicken!
