Easy Almond Joy Cookies Recipe

 Almond Joys are one of my favorite candy bars. I didn’t believe that there was anything that even compared until my Mom introduced these to me. They are DELICIOUS and taste just like an Almond Joy candy bar!

Ingredients

  • 2 packages sweetened coconut (7 ounces each)
  • 1 (14 oz) can sweetened condensed milk
  • 2 Tablespoons sour cream
  • 1 Tablespoon heavy cream
  • 1 1/2 teaspoons vanilla
  • Chocolate topping:
  • 1 package chocolate chips (we prefer milk chocolate, but can use semi-sweet)
  • 2 teaspoons vegetable oil

Instructions

  1. Preheat oven to 325 degrees. Line baking sheet with parchment paper. In a large bowl, mix all ingredients together. Spoon out dough with a small ice cream scoop or spoon. Put on parchment lined cookie sheet. Bake for 17-18 minutes. Remove from oven and let cool.

  3. In a small bowl, microwave chocolate chips and oil for about 1 minute. Stir until melted. Spoon over cookies and top with a whole almond.

  1. Yumm, I also love Almond Joys. I'll definitely have to go for the semi-sweet, because I love dark chocolate, which always make me wish that Mounds had almonds in them.   2. Just found your blog and am dying to try some of the recipes I've found here. I have a great Almond Joy recipe, it's actually bars that you cook and dip, but this is way easier. Can't wait to try it. I also have 5 sisters, but my dad is an only child and wanted a boy, to carry on the name, so they bought one. (Well, guess they call it adopted;o) Love the blog and can't wait to find more wonderful stuff to create.
  3. Question: If I make these to go on a cookie/treat tray as a gift for friends and neighbors, how would I package them? Would I need to, like, put each one on a muffin liner, or what? My husband was looking at the recipe and said, "You know, for a second set, you could leave out the almond, use darker chocolate instead, and call them Mounds Cookies." I think he's on to something. (So glad I married him...LOL!)
  4. I just made these this morning and they turned out horrible! They totally flattened out and completely stuck to the paper - like baked into the paper.I tried using my silpat for the next batch and they even stuck to that. Seriously, I couldn't scrape them off for anything. They didn't hold their shape at all either-the entire batch was a total loss. :( Where did I go wrong?? Any tips?
