I love a good dessert that is simple, quick, full of flavor, and only requires a few ingredients to make. These Pumpkin Spice Rice Krispy Treats, are just that.
They taste like fall in your mouth, but require no baking. Just a simple cereal bar recipe, that will have you wishing you were jumping into a pile of leaves and carving a pumpkin.
If you love pumpkin spice as much as we do, then you need to give this recipe a try. I may or may not have made them three times this week, because they are just that good.

These also make a perfect dessert for Thanksgiving dinner (especially for the kiddos) because they have all the flavor of pumpkin pie, without the strange texture.
These are also a lot sweeter, and I would pick these Pumpkin Spice Rice Krispy Treats any day, over pumpkin pie. Pumpkin pie has a bit of a hollow taste to me, but these bars are full of flavor. I guarantee you will love them.

Can I make this recipe with other cereal?
I have only made these using Rice Krispies, but you could easily switch it up and use a different cereal. Here are a few we recommend:

How to make pumpkin spice rice krispies:
This is a simple recipe that only requires, 5 ingredients that you may already have on hand. Just some Rice Krispies Cereal, butter, mini marshmallows, pumpkin pie spice, pumpkin puree. That’s all there is to it.
This recipe is a lot like any other Rice Krispy Treat recipe, but it’s important that you add the correct ingredients at the right time, for the best results. If you don’t, your treats will come out a little bit strange of a texture.
The tip to making perfect Pumpkin Spice Rice Krispy Treats (or really any Rice Krispy Treats in general) starts with the melting of the marshmallows. For this recipe, I melted the butter and marshmallows at the same time.
Oftentimes people will melt the butter, then add the marshmallows, but I added both at the same time, and every time, they turn out perfectly.
When you are melting your marshmallows, you will want to continue to stir throughout. I use a wooden spoon to do this. I also keep my temperature at medium heat. If you burn the marshmallows, they will be a stringy sticky mess. You want your melted marshmallows to be smooth, puffy, and stay as one mass.
It’s okay if there are a few lumps, you don’t need to worry about working those out. Once you stir in the cereal, they will take care of themselves.
I usually melt/stir my marshmallows for about 6-7 minutes.
Remove them from the heat temporarily and add the pumpkin puree and pumpkin spice seasoning.
Place the pan back on the heat and continue to stir until it is fully combined. This shouldn’t take any longer than 60 seconds to do. Again, be careful not to overheat your marshmallows by continuing to stir the mixture.
Pour the pumpkin marshmallow mixture over your Rice Krispie Cereal. Fold in until the mixture is fully incorporated with the cereal bits, and every piece is equally coated.
This is what the mixture should look like.
Spray a 9 x 13 inch pan with non stick cooking spray, and press the mixture into the pan. I again used my wooden spoon for this step.
If the mixture is sticking to your spoon or spatula, you could spray it with a little non stick cooking spray, and it will keep the mixture from sticking to the spoon.
Let the treats cool for about 15 minutes and allow them to set up a little more. Cut them into squares, garnish with a little extra cinnamon if desired, and serve.
Is pumpkin pie filling the same as pumpkin puree?
I have only made this recipe using pumpkin puree, but I did some research and our friends over at All Recipes, explained the only difference between pumpkin pie filling and pumpkin puree, is that it is seasoned, sweetened and cooked, while pumpkin puree isn’t.
For this recipe, both would work, but we recommend the pumpkin puree, because these are already quite sweet with the marshmallows.
We also add pumpkin seasoning, and you won’t want to over-season your treats.
Could I make this recipe using large marshmallows instead of mini?
You could definitely use the large S’more marshmallows to make this recipe, rather than mini marshmallows. They may take a little longer to evenly melt, but you could even cut them up with scissors or a knife if needed.

Pumpkin Spice Rice Krispies Recipe
Ingredients
- 6 cups Rice Krispies
- 4 cups mini marshmallows
- ¼ cup butter
- ⅓ cup pumpkin puree
- 1 teaspoon pumpkin pie spice
Instructions
- Add your Rice Krispies to a large bowl.
- In a saucepan on medium heat, combine your mini marshmallows and butter. Melt and continue to stir until fully combined.
- After about 6 minutes, or until the marshmallows are almost completely melted, add the pumpkin puree and the pumpkin spice seasoning.
- Mix until fully combined, over the heat. Once combined, remove and pour the mixture over the cereal in the prepared bowl.
- Stir and fold until all the cereal pieces are covered.
- Press into a lightly greased 9 x 13 inch pan.
- Let them cool for about 20 minutes then slice and serve.
- Garnish with cinnamon if desired.
