Loaded Macaroni Salad

We are always looking for great side dishes to go along with our meals, and this delicious salad is loaded with veggies. The kids loved it!  It’s a great salad for a party!

  • 10 ounces elbow macaroni
  • 1/2 cup plain yogurt
  • 1/2 cup mayonnaise
  • 3 teaspoons Honey Dijon mustard
  • 2 teaspoons honey
  • 1 1/2 Tablespoons white wine vinegar
  • 1/4 teaspoon garlic powder
  • Salt & pepper to taste
  • 1 red bell pepper
  • 2/3 cup grape tomatoes, halved
  • 3 eggs, hard boiled and diced
  • 1 cucumber, diced
  • 1 cup shredded carrots
  • 4 radishes, diced
  • 3 stalks celery, diced
  • 1/3 cup red onion, diced
  • 1 Tablespoon fresh parsley, chopped


  1. Cook macaroni according to package directions. Drain well. Rinse with cold water and drain again. Set aside.
  2. In a small bowl combine the yogurt, mayonnaise, Dijon mustard, honey, white wine vinegar, garlic powder, salt and pepper. Set aside.
  3. In a large bowl mix together the cooled macaroni, red pepper, tomatoes, eggs, cucumber, carrots, radishes, celery, red onion, and parsley.
  4. Add in the dressing mixture and toss until well combined. Top with some extra parsley and serve.
