Taco nights are always a favorite and with this Instant Pot ground turkey and rice taco bowl recipe, you can make it a healthy dinner recipe with great flavor.
If you are looking for a healthy family dinner idea, this truly is it! It doesn’t even seem like you are eating healthy. Plus you can top it with all of your favorite toppings so you can customize it for each family member.
This is an easy meal prep recipe to do during the week since there isn’t a lot of chopping to do ahead of time. Plus, since this is an Instant Pot recipe after you brown the meat there isn’t much work to do after that, making it an easy yet favorite family recipe.

To make our turkey and rice taco bowls, you need the following ingredients:
- Olive oil
- Lean ground beef
- Diced onion
- Long grain white rice
- Salsa
- Canned corn
- Canned green chilies
- Black beans
- Taco seasoning mix
- Chicken broth
- Mexican cheese blend

How to Make This Turkey and Rice Taco Bowls Recipe
- Pull out your Instant Pot and press the SAUTE button.
- Allow the inner pot to heat up. Once it’s hot pour in 2 tablespoons of olive oil and add in the ground turkey and diced onion.
- Brown the ground turkey for 5 minutes or until the onion begins to soften.
- Then, add in the rice and the remaining olive oil. Cook that all together for another minute on the SAUTE function.
- Next, dump in the salsa, can of undrained corn, can of undrained green chilies, drained and rinsed black beans, and the taco seasoning mix. No need to stir it yet.
- Now, pour in the chicken broth on top, making sure that all of the rice is covered by the chicken broth.
- Then, put the lid on and turn the knob to the SEALING position.
- Once that is done, press the MANUAL or PRESSURE COOK button and set the timer for 8 minutes.
- When the timer goes off do a quick release by turning the valve to the VENTING position.
- After all of the pressure has released, take the lid off and fluff the rice and mix everything together.
- Now, sprinkle in the Mexican cheese, and let it sit for a few minutes until it begins to melt.
- Then just serve it in bowls and top it with your favorite toppings!

Turkey and Rice Taco Bowls Recipe
Ingredients
Main Bowl
- 3 Tablespoon olive oil, divided
- 1 pound lean ground turkey
- 1 onion, diced
- 2 cups long grain white rice, uncooked
- 16 ounces salsa
- 15 ounces canned corn, undrained
- 4 ounces canned green chilies, undrained
- 15 ounces canned black beans, drained and rinsed
- 1 ounce taco seasoning mix, 1 packet
- 2 cups chicken broth
- 1 cup shredded Mexican blend cheese
Optional Toppings
- shredded lettuce
- diced tomatoes
- sour cream
- avocado
- Fresh chopped cilantro
- shredded cheese
- tortilla strips
Instructions
- Press the SAUTE button.
- Once hot, pour in 2 Tablespoons of olive oil and add the ground turkey and onion. Cook for 5 minutes until onion starts to soften.
- Add the rice and the remaining Tablespoon of oil and toast uncooked rice for 1 minute.
- Dump in the salsa, canned corn, canned green chilies, black beans, and taco seasoning mix.
- Pour the chicken broth on top and make sure all the rice is covered by liquid.
- Lock the lid into place and turn the knob to sealing, not venting.
- Press the MANUAL (or PRESSURE COOK) button and set timer for 8 minutes.
- When done, do a quick release of the pressure by turning the knob to venting.
- When pressure has been released completely, open the lid and fluff the rice and mix everything together.
- Sprinkle the cheese on top of the ground turkey and rice mixture and let sit for a few minutes until it melts.
- Serve in bowls and top with your taco favorite toppings.




















This was very tasty! However, I got a burn notice after about 5 minutes. I have never had a burn notice the entire time I’ve had an instant pot (2 years) and I use it a lot. I cancelled, released pressure, and sure enough the entire bottom was burned. Interestly enough, the rice was cooked and it was fine to eat. I just dumped what wasn’t burned into another pan. It makes a lot of turkey and rice! I bet there’s 10-12 servings. We’ll be eating it for days!
My pot never came to pressure, kept getting the overheat message because the rice was sticking to the bottom. I scraped it 3 times but no luck. Had to cook it on the stove but it was delicious! And yes, it make a ton!

I too kept getting the burn notice! After 2 tries I gave up and just hoped it was done enough at that point. I even made sure to scrape the bottom well before pressure cooking after reading previous reviews. While this tastes good overall it’s a miss for me.
I have a feeling that the 2 cups rice isn’t correct – 1 1/2 cups maybe? Kept getting the burn notice and my pot never came to pressure. Ended up being a disaster. What I could salvage was tasty though!
I have had the same problem as others, my pot will not pressurize! So bummed.
I have tried this twice and had the same problem both times, the pot won’t pressurize! I’ve never had this issue with any other recipe. So bummed since I’ve never had an issue with six sisters recipes before.
I just made this last night and after reading the other reviews I just skipped step three (sautéing the rice). Instead I just dumped the rice on top of the ground Turkey and onions and all of the other ingredients on top of that making sure NOT to stir it and everything came out perfect. Pressurized just fine, no burning, etc. I think not having the rice on the very bottom is the way to go and not stirring!!
Easy recipe to make. I did substitute hamburger and fixed it like I would for tacos since I didn’t have most of the ingredients in the recipe. It was just as good. Love the rice, taco flavors and topped it off with lettuce, more cheese, and ranch dressing since I didn’t have any sour cream. Oh I so need to go grocery shopping to restock the staples 😊
I absolutely loved this, as did my husband who gave it a 10/10. I did use ground beef, but will use turkey next time. I followed the directions and didn’t have any of the issues some others have had. I will be making this again!
This recipe was delicious although I added the rice after the sals, beans and corn and poured the chicken broth over it because I was afraid to get the burn message and it turned out perfectly!
I really want to make this, but don’t have an Instant Pot. Can this be done in a slow cooker? Or as a skillet meal? How long would I cook it for?
I think it could be done as a skillet meal. You would need to make some adjustments. Cook the turkey and onion together. Be sure your rice is cooked beforehand and then add it in.
Would have been great other than burning half the rice to the bottom .. DONT DO THIS RECIPE..unless ya do the rice another way.. pressure cooker will not pressure up and its gonna be a real joy cleaning up the pan.. blaaaaah
