It doesn’t get easier or more flavorful than this Instant Pot Cilantro Lime Chicken Recipe!
You can use this chicken in just about anything! Serve on top of nachos, salads, in tacos, wrapped in burritos – the possibilities are endless!

Ingredients needed for Instant Pot Cilantro Lime Chicken:
1 1/2 pounds chicken breast1 cup chicken broth
Juice from 2 limes
1 bunch fresh cilantro (roughly chopped)
1 (12 ounce) bag frozen corn
2 cloves garlic (minced)
1/2 red onion (diced)
(15 ounces) canned black beans (drained and rinsed)
1 teaspoon cumin
salt and pepper, to taste
How to make this flavorful Chicken:
Place all ingredients in your Instant Pot.
Put your lid on the pot and put the VALVE on sealing (not venting).
Press the MANUAL (or PRESSURE COOK) button and set timer for 20 minutes (or 25 minutes if chicken is frozen).
When timer is finished, do a QUICK RELEASE of the pressure by moving the valve to VENTING.
Remove chicken from pot and shred, then add back into Instant Pot and mix with other ingredients.
Serve on top of nachos, salads, in tacos, wrapped in burritos – the possibilities are endless!

How to turn this Instant Pot Cilantro Lime Chicken into a Freezer Meal:
Add all ingredients EXCEPT CHICKEN BROTH to a gallon-sized freezer bag. Place freezer bag into freezer and it will last up to 60 days.
When ready to use, dump ingredients from bag into Instant Pot and add 1 cup of chicken broth in with the frozen food.
Place the lid on top, move the valve to SEALING, and press the MANUAL button. Set timer for 25 minutes.
You can do a NATURAL RELEASE or QUICK RELEASE when the timer is done – I even like to let it sit in the Instant Pot for a few hours so that it falls apart so easily. Follow the rest of the instructions as written.

This sounds so yummy but I’m confused, says dump all ingredients but then it says it again once it’s cooked, so what do I add before cooking?
Add everything in to cook. After it’s all done cooking, remove chicken from pot and shred, then add shredded chicken back into Instant Pot and mix with other ingredients. (The ingredients that are already in the pot that it cooked with).

We enjoyed this recipe! Even with me not being able to get the frozen bag compact enough and having to thaw some of it- then realizing my Instantlot is smaller and having to cook part of it in the skillet and then add it- it was still delicious! I added tajin seasoning to my bowl and squeezed some more lime on my serving!
