Country Breakfast Casserole

Confession: Sometimes when I drop my husband off at work in the mornings, I stop and get myself a country breakfast burrito from Taco Time. Maybe it’s just laziness, but they just taste SO good! There’s just something about the combination of tater-tots and country gravy! I figured if the combo tastes great in a tortilla, I bet it would taste great as a hot breakfast casserole. I was right! This breakfast casserole is great for brinner, brunch, or any meal in between!

  • 1 16-oz package sausage
  • 1 chopped green onion
  • 2 cups shredded cheddar cheese
  • 6 eggs, lightly beaten
  • 1 cup water
  • 1/2 cup milk
  • 2 cups frozen tater tots
  • 1 2.64-oz country gravy mix
  • 6 slices of bread, cubed
  • 2 Tablespoons butter


  1. Preheat oven to 325 degrees F.
  2. Grease a 13x9 inch pan.
  3. Brown sausage in skillet and drain the fat. Combine sausage and green onion, and spread across the bottom.
  4. Top with shredded cheese.
  5. Mix together eggs, milk, water, and gravy mix and pour evenly over the pan.
  6. Arrange bread cubes and tater tots on top and drizzle melted butter over everything.
  7. Bake for 35-40 minutes.

    I was wondering if there is a way to get the picture to print smaller. The picture printed is so large that it takes a full page. Some of the recipes have the text to the left of the picture and that works much better.
