We like to call this the “lazy cheesecake salad” because it has all the delicious taste of cheesecake topped with fruit, but without all of the effort!

- Frozen mixed berries
- Fresh strawberries
I am sure one of you had done this too, but occasionally I forget to pull out the Cool Whip to thaw and I reach for it and it is still frozen. Unfortunately, that will not work for this recipe. So, try out these 3 simple ways to quickly thaw Cool Whip from Bakingkneads.

Whether you saw this recipe on Facebook and just had to make it, or someone else told you about it, you are going to love how simple it is to make and even better to eat!
Start by pouring the container of low-fat strawberry yogurt into the large mixing bowl. Then add in the boxes of instant cheesecake pudding mix. (The dry mix, do not make it according to the package.) It will form a bit of a lump consistency and that is okay.
Next, you are going to fold in the whole container of Cool Whip into the yogurt mixture. As you stir it up, the lumps should begin to dissolve.
Once those have been combined completely, add in the partially thawed frozen mixed berries, sliced bananas, and the sliced fresh strawberries and stir it all together.
Cover the mixing bowl with saran wrap and store it in the refrigerator until you are ready to serve it.
PRO TIP: Make this salad the day you plan on eating it, as it will get a little soupy from the berries overnight. If you have leftovers that you want to eat the next day, give it a good stir and even add in some additional marshmallows to soak up some of the extra liquid.

Berry Cheesecake Pudding Salad Recipe
- 1 (32 ounce) container low fat strawberry yogurt
- 2 (3.4 ounce) boxes instant cheesecake pudding (white chocolate flavor also works)
- 16 ounces Cool Whip Whipped Topping
- 1 (16 ounce) package frozen mixed berries (partially thawed)
- 3 bananas sliced
- 1 pound fresh strawberries sliced
- Pour yogurt into a large bowl and mix in pudding (it will be kind of lumpy).
- Fold in the Cool-Whip (the lumps will go away as you stir it).
- Fold in the fruit until combined.
- Keep refrigerated until ready to serve.
