Cucumber Salad

Fresh avocados, cucumbers, tomatoes, and onions topped with feta cheese and tossed with a homemade dressing made with balsamic vinegar - it's the perfect healthy side dish to any meal!


We love this salad because of how light and fresh it is. There’s nothing worse than being in the kitchen in the middle of the summer, cooking over a hot stove. This is made of all fresh ingredients and in no time you have a delicious summer salad that is perfect for any time of day!

  • 2 Cucumbers peeled and diced into large chunks
  • 2 Avocados diced
  • 2 1/2 cups chopped Cherry Tomatoes
  • 3 Tablespoons minced Red Onion
  • 4 oz cubed Feta Cheese
  • 1 Tablespoon Balsamic Vinegar
  • 2 Tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper


  1. Add diced cucumbers, halved cherry tomatoes, and minced onion together into a bowl.
  2. Toss until well combined.
  3. To bowl, add diced avocados and cubed feta cheese. Toss gently so that the avocados and cheese do not fall apart.
  4. In a separate bowl, whisk together vinegar, olive oil, salt and pepper.
  5. Pour vinegar mixture over salad and toss gently until combined.
  6. If not serving immediately, wait to add avocados to avoid them browning,
