My favorite food is, and always has been, Avocados. You can eat them with everything, and trust me when I say I definitely do! I stumbled across some Avocado Pasta on Pinterest and knew I had to try it! I modified it to include all my favorite foods- tomatoes, Parmesan cheese, and of course I added an extra avocado. 😉 Avocado lovers, you are in for a treat!

Avocado Pasta Recipe
Delicious Avocado Pasta is sure to please any avocado fan!
Ingredients
- 12 ounces cooked pasta (I used spaghetti, any other kind would work!)
- 2 avocados
- ⅓ cup fresh basil leaves
- 2 garlic cloves
- 2 Tablespoons lemon juice
- ¼ cup olive oil
- 1 cup cherry tomatoes
- 1 cup parmesan cheese
- salt and pepper, to taste
Instructions
- In a food processor, blend together avocados (halved and seeded), basil leaves, garlic, lemon juice, and olive oil. Blend until avocado is smooth. Pour avocado mixture into bowl with pasta and stir until pasta and is completely covered. Mix in halved cherry tomatoes. Serve immediately, top with salt and pepper and Parmesan cheese.

Is this a hot or cold dish? It says cooked pasta but is the pasta hot or cold?

That looks delicious. I usually have a salad with avocados when I have pasta, but I had never thought to try using the avocados as part of the pasta sauce.

I made this for my family and we thought it was pretty terrible! My toddler wouldn't touch it and she usually eats anything with noodles. I think the raw garlic is what ruined it. Maybe it would be better if they were sautéed first??
