Waldorf Turkey Sandwich Recipe

This sandwich is so delicious and a great way to use that leftover Thanksgiving turkey.  The raisin bread takes this yummy sandwich over the top!!

Ingredients

  • 1 1/4 cups cooked turkey breast (chicken will work in this recipe too)
  • 1 Gala apple (chopped)
  • 1 stalk celery (diced)
  • 4 Tablespoon mayonnaise
  • 2 Tablespoons plain yogurt
  • 2 Tablespoons chopped walnuts
  • 2 Tablespoons raisins
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cinnamon
  • 4 Romaine lettuce leaves
  • 8 slices raisin bread

Instructions

  1. In a large bowl mix together the cooked turkey, chopped apple, celery, mayonnaise, yogurt, walnuts, raisins, nutmeg, and cinnamon.
  2. Cover and refrigerate for about 1 hour. Spoon 3/4 cup onto 4 slices of toasted raisin bread.
  3. Top with a lettuce leaf and then add the other slice of toasted bread on top.
  4. The perfect sandwich.
