These St. Patrick’s Day Cupcakes are so easy to make and both kids and adults LOVE them! I wanted to make a cute St. Patrick’s Day treat for all the kids. Not only are these cupcakes so cute, but they are delicious!
Recipe Ingredient Notes
To make St. Patrick’s Day Cupcakes, you will need the following ingredients:
- 1 (15.25 ounce) package white cake mix
- 1¼ cup water
- ⅓ cup vegetable oil
- 3 eggs
To make the frosting, you will need the following ingredients:
- 1 cup butter (softened)
- 4½ cups powdered sugar
- 1 teaspoon vanilla
- ⅓ cup heavy cream
- ¼ teaspoon salt
- 4 drops green food coloring
To make the toppings, you need the following ingredients:
- 12 AirHeads Extreme Rainbow candy
- 3 cups mini marshmallows
- 24 rolo candies
- gold sprinkles

How to Make Our St. Patrick’s Day Cupcakes
- Prepare cake mix according to package directions for cupcakes by combining the cake mix, water, vegetable oil, and eggs. Bake cupcakes for 14-19 minutes and let cool.
- To make the frosting, beat butter until creamy.
- Add powdered sugar, vanilla, heavy cream and salt and mix together with a hand mixer until well combined.
- Add green food coloring until desired color is reached.
- Spread or pipe frosting on top of each cupcake.
- Cut each AirHeads Extreme candy in half and place on top of each cupcake to create an arch.
- Place two mini marshmallows on each end of the rainbow.
- To make the pot of gold, pipe a small amount of frosting onto the wide end of each Rolo, then press into gold sprinkles until all the frosting is covered. Place on the cupcake.
Storage Instructions
To store cupcakes, make sure to let them completely cool. Unfrosted cupcakes are easier to store after baking, then frosted cupcakes.
- Container: Always store cupcakes in an airtight container to prevent the air from drying them out and contamination. We like to store cupcakes in this container.
- Counter: Unfrosted cupcakes can be stored at room temperature (and out of sunlight) for one day.
- Refrigerator: You can keep cupcakes in the refrigerator for 2-3 days. Before eating, allow them time to come back to room temperature before serving. If you ice them with the cream cheese frosting, we recommend refrigerating them.

I put my rolos in the freezer for a bit after I put the gold sprinkles on them. It allowed me to press them into the cupcake frosting without causing a divot in the “gold”.

I’m making mine for a St. Patrick’s Day smorgasbord. I think I will just leave the rolo in the gold foil for the recipient to unwrap and enjoy.
