These Melted Witch Cupcakes are perfect for Halloween and will quickly become a crowd favorite!
I LOVE Halloween – not for the scary, spooky side, but for the cute decorations and delicious treats. I saw these cute melted witch brownies on Pinterest, and I knew I needed to make them.
While I love brownies – I absolutely LOVE cupcakes, so I switched out the brownie for a chocolate chocolate chip cupcake with marshmallow buttercream frosting and green, white chocolate ganache. The Melted Witch Cupcakes were born!
The Melted Witch Cupcakes are cute, and so easy to make! Do not let them intimidate you, because I am not crafty, but loved how they turned out. I sent them to my husband’s work, and all his co-workers gave them FIVE STARS. They would be perfect for your next Halloween party.
How to make spooky Halloween Melted Witch Cupcakes:
Cupcakes
Step 1: Preheat oven to 350 degrees and line pans with cupcake liners.
Step 2: In a large bowl, combine the eggs, oil, milk, sour cream, and vanilla extract and mix until thoroughly combined.
Step 3: Add in the cake mix and stir until smooth. Fold in chocolate chips.
Step 4: Fill cupcake liners about 3/4 of the way full, then bake for 18-22 minutes until a toothpick inserted comes out clean.
Frosting
Step 5: Whip the butter on medium-high for a good 4-5 minutes, stopping to scrape the bowl once or twice.
Step 6: Reduce the speed to low, and slowly add the powdered sugar. You can add more or less powdered sugar depending on how thick you want your icing.
Step 7: Once the powdered sugar is all incorporated, add in vanilla extract and marshmallow creme.
Step 8: Pipe frosting onto each cupcake. You can use an actual piping bag, or you can put the frosting in a ziplock bag and cut the corner. Then squeeze the bag as you would a piping bag.
Ganache
Step 9: Break the white chocolate into small pieces and place in a heat-resistant bowl.
Step 10: In a small saucepan, heat the heavy cream until just boiling, then remove from heat and pour over white chocolate.
Step 11: Mix thoroughly until white chocolate is completely melted. Add green food coloring, 1-2 drops at a time, until the white chocolate reaches your desired coloring.
Step 12: Drizzle ganache over frosting. Glue witch boots to the straw halves, and stick two legs into each cupcake with the boots facing out.
