- Rice Chex
- chopped pecans
- brown sugar
- butter
- light corn syrup
- baking soda
- vegetable oil
- white chocolate chips

How to Make Pecan Pie Chex Mix:
- Combine Rice Chex and chopped pecans in a large mixing bowl.
- Combine brown sugar, butter and corn syrup in a microwave-safe bowl and microwave on high for 2 minutes, stirring after 1 minute.
- Remove from microwave and whisk in baking soda.
- Pour over cereal mixture and gently toss until cereal and pecans are evenly coated.
- Spread mixture onto a baking sheet lined with waxed paper; let cool.
- In a microwave-safe bowl, combine vegetable oil and white chocolate chips. Cook on high for 2-3 minutes, stirring every minute until smooth.
- Drizzle melted white chocolate over cereal mixture and refrigerate until set.
- Break into pieces and serve.
- Store in an airtight container.
Storage Instructions
For daily snacking, keep your mix in a cool, dry place like a pantry.
- Shelf Life: It stays fresh for 2 weeks on average, though it tastes best if eaten within the first 2–3 days.
- Avoid the Fridge: Never store Chex Mix in the refrigerator; the cold and humidity will cause it to lose its crunch and become soggy.
- Airtight Container: Transfer cooled mix to a tightly sealed Tupperware, glass jar, or heavy-duty Ziploc bag. Squeeze as much air as possible out of bags to maintain crispness.

It should be fine in an airtight container for about 5 days. It doesn’t last long at our house, we polish it off within a day or 2. 🙂
