To make our beef stroganoff soup, you need the following ingredients:
- Beef stew meat
- Dry onion soup mix
- Beef broth
- Worcestershire sauce
- Sliced mushrooms
- Dry egg noodles
- Half and half
- Cornstarch
- Sour cream
- Fresh parsley

How to Make This Instant Pot Beef Stroganoff Soup Recipe
- Start by getting out your Instant Pot and put in the stew meat, dry onion soup mix, beef broth, Worcestershire sauce, and the sliced mushrooms.
- Once all of that is in the Instant Pot, place the lid on top and lock it into place.
- Then press the MANUAL or PRESSURE COOK button and set the timer for 50 minutes.
- After the timer runs down, move the valve to the VENTING position and let the Instant Pot do a quick release of the pressure inside.
- Then remove the lid and press the SAUTE button.
- Now, add in the raw egg noodles and let it cook for about 5 minutes or until the noodles have reached your desired tenderness.
- Then in a small mixing bowl, combine the half and half with the cornstarch.
- Once that is combined, slowly pour it into the Instand Pot and mix everything together.
- Next, add the sour cream to the beef soup and continue to mix everything together.
- Now, press the CANCEL button and serve the stroganoff soup right away and top it off with freshly chopped parsley.


Recipe Notes
If you want a way to spice up your stroganoff just a bit, try some different toppings when serving your stroganoff soup. Some of our favorite toppings include Mozzarella cheese, bacon bits, avocado, shredded carrots, and sour cream (or plain Greek yogurt).

Beef Stroganoff Soup Recipe
Ingredients
- 1 ½ pounds beef stew meat
- 2 ounces dry onion soup mix, 2 packets
- 8 cups beef broth
- 2 Tablespoon Worcestershire sauce
- 8 ounces fresh sliced mushrooms
- 8 ounces egg noodles
- 1 cup half and half
- 2 Tablespoon cornstarch
- ½ cup sour cream
- 2 Tablespoon fresh parsley, chopped
Instructions
- Add stew meat, soup mix, beef broth, Worcestershire sauce, and mushrooms to the Instant Pot.
- Place the lid on the Instant Pot and place the MANUAL or PRESSURE COOK button. Set timer for 50 minutes.
- When the timer is finished, let the Instant Pot do a QUICK RELEASE of the pressure.
- Remove the lid and press the SAUTE button.
- Add in the egg noodles and cook for about 5 minutes or until noodles reach desired tenderness.
- In a bowl, mix together half and half with the cornstarch. Slowly pour into the Instant Pot and mix well. Add in the sour cream and mix again.
