Air fryer recipes are easily becoming a favorite among our recipes, and with this delicious combination of grated zucchini, cheese, and delicious seasonings to make a quick snack, the whole family can enjoy.
Plus, it is a low carb snack with a delicious homemade tzatziki sauce for a delicious dip, similar to the one we use on our Greek tacos recipe.
You can use this as a great appetizer that is a healthier option, or it also makes a perfect side dish to serve with our air fryer pork chops!

Variations and Optional Addins:
- For some extra flavor, add onion powder to your fritters or red pepper flakes.
- The Greek yogurt and sour cream can be used interchangeably.
- Add fresh herbs like fresh chives or green onions.

Key Ingredients
- Zucchini: Be sure to remove any excess moisture from the shredded zucchini using either a cheese cloth or a paper towels. Leaving too much liquid could cause soggy fritters.
- Cooking spray: While this might not seem necessary, using cooking spray in the air fryer is a great way to make sure you get perfectly crispy fritters on the outside.



How to Make Air Fryer Zucchini Fritters:
Make the sauce:
- Prepare the sauce/dip: add sour cream or Greek yogurt, dill weed, salt and pepper, to taste, lemon juice, and garlic powder in a small bowl. Stir to combine and transfer into a bowl. Drizzle with olive oil and refrigerate while you make the fritters.
Make the fritters:
- Grate your zucchinis: wash and trim the zucchinis. Grate the zucchinis using a box grater. Place zucchini into a colander and sprinkle them with salt. Let the zucchinis stand for 10 minutes and drain.
- After 10 minutes, squeeze the zucchinis and transfer them onto a cheesecloth. Twist the cloth to remove excess liquid and place the zucchinis in a bowl.
- Add flour, Parmesan cheese, egg, and garlic powder. Stir until all is well combined.
- If needed, season with additional salt.
Cook the fritters:
- Preheat your air fryer for 10 minutes at 350°F.
- Shape the mixture into 8 patties.
- Working in batches if necessary, coat the tops of the zucchini patties with cooking spray. Arrange the fritters into a frying basket, in a single layer, and air-fry for 7 minutes. Flip the fritters and air-fry them for another 7 minutes.
Serve:
- Serve the zucchini fritters with prepared sour cream, dill sauce/dip or your favorite dipping sauce.



Expert Tips:
- Make sure to remove excess water from the zucchinis, otherwise, you will end up with a soggy mess.
- You can make the dipping sauce with Greek yogurt or sour cream. Adding mint to the sauce can be a nice addition.
- Instead of flour, for crispier fritters, you can use panko breadcrumbs. In that case, allow the mixture to rest for a few minutes before air-frying.

Store: Place the leftover crispy air fryer zucchini fritters in an airtight container and place them in the fridge for 3-4 days, or freezer-safe container and store the leftover fritters in the freezer for up to 3 months.
Reheat: Pop the fried zucchini cakes in the air fryer at 350°F for another 3-5 minutes or until crispy zucchini fritters.

Can you bake these in an oven or toaster oven?
We haven’t tried it in the oven or toaster oven – but we would increase the cook time to 20 minutes and try cooking it at 375F. Let us know if you try it and how it turns out!
