Cheesy Zucchini Sticks

It is officially SUMMER! We made it! One of my favorite vegetables in the summer is Zucchini. These Cheesy Sticks will make you love zucchini  even more!  Happy Baking!

  • 5 medium zucchini
  • 4 Tablespoons butter (melted)
  • 2 teaspoons minced garlic
  • 1 Tablespoon garlic salt
  • 3/4 cup shredded mozzarella cheese


  1. Preheat oven to 350 degrees.
  2. Line a rimmed cookie sheet with aluminum foil.
  3. Cut zucchini into thick wedges.
  4. Place the zucchini on baking sheet.
  5. In a small bowl, stir together the melted butter and garlic.
  6. Brush the garlic/butter mixture onto zucchini.
  7. Sprinkle with garlic salt and mozzarella cheese.
  8. Bake in preheated oven 11-13 minutes until the cheese starts to brown and zucchini are fork tender. Serve warm.

    I discover three months ago and I'm hooked! So to share the love I started a cooking club in my ward and at work! We have the best time! We also include our kids in on the fun of cooking together!

    Would it be ok to serve these cold? I'm think of making these for my father's birthday party this July but I will be driving about an hour and half away to get them there or should I just make them at my parents home instead of making them at my home and packing them up?
