Prepare the sauce/dip: add sour cream or Greek yogurt, dill weed, salt and pepper, to taste, lemon juice, and garlic powder in a bowl. Stir to combine and transfer into a bowl. Drizzle with olive oil and refrigerate while you make the fritters.
Make the fritters:
Grate your zucchinis: wash and trim the zucchinis. Grate the zucchinis using a box grater. Transfer the zucchinis into a colander and sprinkle them with salt. Let the zucchinis stand for 10 minutes and drain.
After 10 minutes, squeeze the zucchinis and transfer them onto a cheesecloth. Twist the cloth to remove excess liquid and place the zucchinis in a bowl.
Add flour, Parmesan cheese, egg, and garlic powder. Stir until all is well combined.
If needed, season with additional salt.
Cook the fritters:
Preheat your air fryer for 10 minutes at 350°F.
Shape the mixture into 8 patties.
Working in batches if necessary, coat the tops of the fritters with cooking spray. Arrange the fritters into a frying basket, in a single layer, and air-fry for 7 minutes. Flip the fritters and air-fry them for another 7 minutes.
Serve:
Serve the zucchini fritters with prepared sour cream, dill sauce/dip.
Notes
Make sure to remove excess water from the zucchinis, otherwise, you will end up with a soggy mess.
