Chicken Bacon Alfredo Casserole Recipe

If you have never tried our Chicken Bacon Alfredo Casserole, you are missing out. This recipe is a family favorite that has so much flavor, and an amazing taste. Did we mention how easy it is to make? It is so easy!

This is the perfect meal for a busy weeknight. It can be thrown together in a matter of minutes and is a great way to use leftover chicken (or even a rotisserie chicken).
If you know that you will have a busy day, you can prep this meal in the morning and throw it in the oven right before you are ready to eat.
My husband swears that he doesn’t like artichokes, but he practically licked his plate clean. This is definitely a keeper at our house.

Pasta is pasta, and it is so versatile, which is nice, because if you don’t have a certain noodle shape, it usually doesn’t matter.

You can easily replace any pasta noodle, for another. For this recipe, here is what we recommend:

-Macaroni
-Rigatoni
-Penne
-Orzo
-Farefalle (or bow tie noodles)
-Shells
-Cavatappi

what other cheese would be good with this recipe?

I love this recipe, because it is so versatile, and you could easily switch out ingredients as needed. We love adding vegetables, and different cheese to this recipe.

This recipe calls for mozzarella cheese, however, you could use cheddar, pepper jack cheese, parmesan cheese, cheddar jack, provolone, or any other favorite cheese.

You could also use one cheese, and top it with freshly grated parmesan cheese. It tastes amazing.

Chicken Bacon Alfredo Casserole Recipe

Ingredients

  • 8 oz. penne or bowtie pasta
  • 1 (16 oz) jar Alfredo sauce (we used light sauce- you could also use homemade sauce!)
  • 2 chicken breasts, cooked and chopped (about 2 c. chopped chicken)
  • 8 strips cooked bacon, chopped (we used turkey bacon)
  • 1 14-oz. jar marinated artichoke hearts, drained and chopped
  • 1/2 c. chopped green onions (about 1 decent-sized bunch)
  • 1 c. shredded mozzarella cheese, divided
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350 degrees.
  2. Prepare pasta according to package directions.
  3. When pasta is done, drain and dump into a large bowl drain. Add alfredo sauce and mix together. Toss with chopped chicken, bacon, artichoke hearts, green onions, and 1/2 c. mozzarella. Season to taste.
  4. Transfer mixture to an 9×9? baking dish and sprinkle with remaining 1/2 c. mozzarella cheese. Cover with aluminum foil and bake at 350 degrees for 20 minutes or until heated through and cheese is bubbly.

    We were able to get 2 meals out of this, and although we really liked it the first night, the second time it was fantastic. I used tri color pasta for a little more color (oh, ok, because it was all I had at the time *smile*), but left everything else the same. Thanks SO much for the recipe - we'll have it often!
