Healthy Meals Monday: Egg White Egg Salad Sandwhich

I have loved Egg Salad Sandwiches from a young age, but it wasn't until I got older, I realized all the extra fat in them. I decided to make a healthier version, and was very pleased with the result. You will love this simple and delicious Egg White Egg Salad Sandwich recipe.

If you are like me, you have quite a few colorful hard boiled eggs in your refrigerator. I LOVE egg salad sandwiches so I have been experimenting on how to make them healthy.
This is what I came up with,  and yes my husband and I LOVED it.
Not only did my husband love it, but my kids loved it. They want me to pack them in their home lunches, but that smell is just a little too pungent, I don’t think I can do it to them quite yet.
If you love egg salad sandwiches, you are going to love this healthy twist on them as well. I promise, they are so delicious, and you can’t even tell they are healthy.
My favorite healthy foods, are the ones that don’t taste healthy, and this one definitely fits the bill.

make it into a wrap:

One of my favorite things, is wraps. I love whole wheat tortillas, and this recipe would taste amazing on a tortilla, served as a wrap. It’s also great for meal prep, because tortillas don’t get as soggy as bread, usually.

This would be a great meal prep recipe, but we recommend going to a place where nobody is around. Mostly because any egg salad sandwich isn’t going to give off the best smell if you know what I mean.

what toppings would be good on this sandwich?

I am a huge topping person. Especially if I can sneak vegetables into my diet, without eating them plain, I am one happy girl. Here are a few of my favorite additions:

-Cucumber Slices (sliced very thin)
-Carrot Shreds
-Celery (sliced very thin)
-Olive Slices
-Sweet Pickle Relish

Healthy Meals Monday: Egg White Egg Salad Sandwhich

I LOVE egg salad sandwiches so I have been experimenting on how to make them healthy and still taste good! This recipe is a winner!

  • 5 hard boiled egg whites
  • 2 hard-boiled egg yolks (you could do one yolk and it will still turn out just fine)
  • 2 to 3 tablespoons of low fat cottage cheese (I know you are thinking I'm crazy.. but you couldn't even tell there wasn't mayo in it!!!)
  • 1 Tablespoon on Honey Mustard
  • 2 tsp of lemon juice
  • 1/2 avocado, mashed
  • 1 Tablespoon of Relish (I used sweet relish)
  • Salt and Pepper to taste
  • Spinach, and tomato slices (optional)
  • 6 slices of whole wheat sandwich bread, toasted


  1. Using a pastry blender or fork, mash together egg whites and yolks in a large bowl; carefully fold in avocado and relish.
  2. Stir in cottage cheese, mustard, and lemon juice; season with salt and pepper.
  3. Place 3 slices of bread on your table. Evenly divide egg salad among bread slices. Add spinach or tomato, if desired. Top with remaining 3 slices bread and enjoy
