Mini Taco Bites


I am having a blast watching the World Cup! I really look forward to it every 4 years! This year we have ESPN on our Internet so we can watch every game! This last Thursday I made these Mini Taco Bites for our USA Game Party. They were a HUGE hit! Good luck to team USA! USA! USA! (I’m cheering the last two) Ha Ha!

A quick easy appetizer that tastes delicious!
Ingredients
  • 2 lbs of boneless skinless chicken breasts
  • 1 (8 oz) fat free block of cream cheese
  • 2 cups of your favorite salsa
  • 1 can of black beans, rinsed
  • 1 cup of fat free sour cream
  • 1 can of black olives, sliced
  • 1 cup of mozzarella cheese
  • 2 avocados, cut into small pieces
  • 2 tomatoes, cut into small pieces
  • 2 bag of Tostitos Scoops

Instructions
  1. In a slow cooker place your chicken on the bottom, then add your block of cream cheese then pour your salsa on top. Put the lid on a cook on low for 6 hours.
  2. Once your chicken is cooked all the way through, shred your chicken and mix it really well with the cream cheese and salsa.
  3. On 2 sheets place as many Tostito Scoops as you possibly can. It is okay if they touch each other.
  4. Next start filling up your mini taco bites. I started with 3 beans on the bottom, then I added a little meat of meat mixture, a little bit of sour cream, cheese, an olive bit, a tomato bit, and one piece of avocado.
  5. You can serve them cold, or broil them for a minute of two in the oven and serve them hot. Just be sure to watch them if you are broiling so they don’t burn
  6. You could easy split this recipe in half if you only want one tray of these taco bites.

Easy Ice Cream Cake

My husband doesn’t like cake (I know… I never thought I would marry a someone who doesn’t eat frosting).  But lucky for him, I like to be creative with his birthday “cakes.”  This year I made these icecream cakes and they were a huge hit!  He was pleasantly surprised with how good these really were. If you have someone that doesn’t love cake, I suggest going this route!

 

Easy Ice Cream Cake

I perfect treat on a hot summer night.
Ingredients
  • 12 Ice cream sandwiches
  • ½ cup of hot fudge, divided
  • 1 (7.25 oz) Chocolate Smuckers Magic Shell
  • 2 of your favorite candy bars cut into small pieces

Instructions
  1. Line a cookie sheet with aluminum foil.
  2. Heat your hot fudge so it is a little thinner. You don’t want it burning hot.
  3. You are going to make 2 different cakes.
  4. Lay 3 ice cream sandwiches on the foil. Spread ¼ of the hot fudge on the 3 sandwiches. Place 3 more ice cream sandwiches on top of the fudge.
  5. Follow the instructions on Smucker’s Magic Shell. Once it is warmed and ready pour half of the bottle over your icecream sandwiches. Spread it around with a knife. Try your best to get the magic shell on the edges also.
  6. Place your cut up candy bars in the middle of the cake and drizzle a little magic shell over the candy bars so they stay in place.
  7. Make another cake just like the first on your cookie sheet.
  8. Once your cakes are done, stick them in your freezer until you are ready to eat them.
  9. If you need to leave them over night, make sure you cover them with saran wrap.
  10. I doubled the recipe and made 4 different cakes. I used Snickers, Recess, Milky Way, and Kit Kat. With the Snickers and Milky Way cake I added caramel in the middle and it was SO good!

Chicken Bacon Alfredo French Bread Pizza Recipe Six Sisters Stuff


Since Elyse had her baby, I wanted to take her dinner one night just to help her out.
But what in the world do you take a girl who is a better cook than you?!

I went over all the recipes on our blog and most of my favorites were ones that she had made. So, I knew I had to come up with something that would blow her away. :)

Elyse has a strong love for pizza. I had recently had a pizza like this at a local restaurant, so I decided to try and copycat it to make it my own- and make it easy by putting it on french bread!.
The end result was fantastic. Elyse even text me that night to let me know that it was her husband’s new favorite.

If this pizza won her husband over, then mission accomplished!

Chicken Bacon Alfredo French Bread Pizza Recipe

This is the perfect meal for when you need something quick and delicious. The flavors are absolutely delicious!
Ingredients
  • 1 loaf French bread
  • 1 (16 oz) jar alfredo sauce (or a homemade alfredo sauce)
  • 1 teaspoon garlic salt
  • 1 teaspoon Italian seasoning
  • 4 cups mozzarella cheese, shredded
  • 2 cups shredded rotisserie chicken (or any cooked chicken)
  • 2 roma tomatoes, diced
  • 4-5 green onions, thinly sliced
  • 1 (3 oz) package bacon bits (or you could cook your own bacon)
  • ½ cup shredded Parmesan cheese

Instructions
  1. Preheat oven to 400 degrees.
  2. Cut loaf of French Bread lengthwise and place on a large baking sheet (I just used a cookie sheet). Spread alfredo sauce evenly over bread (as much or as little as you like). Sprinkle garlic salt and Italian seasoning on top of sauce.
  3. Top with mozzarella cheese, cooked chicken, tomatoes, green onions, bacon bits, and Parmesan cheese.
  4. Cook for about 10 minutes, or until cheese starts to melt.
  5. Cut into slices and serve.

I have mentioned before how my husband’s favorite dessert of all time is a batch of boxed brownies.
I am not sure how to take that . . . I mean, I am always in the kitchen baking some sort of new dessert . . . and all that he says he wants is a box of Betty Crocker’s brownies.

Then I remember how much I love them too and I’m not mad anymore. :) Pretty much any kind of dessert is my favorite.

These Lemon Poppy Seed Bars happened in my kitchen a couple of days ago . . . I love our Sugar Cookie Bars, but knew I wanted to add a lemon twist. Then I remembered how much I love Poppy Seed bread, so I combined forces and these babies were born! They are chewy and dense and incredibly delicious. I highly recommend making them ASAP!

Lemon Poppy Seed Bars Recipe

These bars are some of my favorite things- lemon, sugar cookies, and poppy seeds – all rolled into one. Chewy and dense, they are the perfect dessert! They make a lot, so they are awesome for potlucks or parties.
Ingredients
  • 1 cup unsalted butter, at room temperature
  • 2 cups sugar
  • 4 large eggs
  • 2½ teaspoons lemon extract
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • 4 teaspoons poppy seeds
Frosting:
  • ½ cup butter, softened
  • ¼ cup milk
  • 1½ teaspoons lemon extract
  • 4 cups powdered sugar
  • a couple drops of yellow food coloring (optional)

Instructions
  1. Preheat oven to 375 degrees. Spray a large 15x10x1″ baking sheet (cookie sheet) with non-stick cookie spray.
  2. In a large bowl, cream butter and sugar until fluffy (I used a mixer, but you could also do it by hand). Add eggs, one at a time, mixing after each one. Mix in lemon extract.
  3. In a separate bowl, mix together flour, salt, baking soda, and poppy seeds. Add in with wet ingredients and mix until just combined.
  4. Spread the dough all the way to the edges in the prepared cookie sheet . I have found that it’s easier to just use your hands to spread it (the dough may be sticky, so spray hands with non-stick cooking spray to make it easier to spread).
  5. Bake for 10-15 minutes or until dough is a light golden brown. Cool completely before frosting.
  6. For frosting: Mix frosting ingredients together until completely combined. Spread over pan of bars.
