Easter Egg Basket Cupcakes

Easter is right around the corner! My mom used to make these cupcakes for us every year while we were growing up . . .
It was a yummy tradition that I looked forward to and that I now do with my kids.
They are the perfect dessert for your Easter Egg Hunt or Easter dinner and they are just so cute. I promise they will be the hit of the party!
Ingredients:
-24 cupcakes, baked and cooled (I just used a box mix)
-1 cup sweetened flaked coconut
-Food coloring (I used green)
-Jellybeans (or other egg-shaped candy, such as M&M’s or Robin’s Eggs)
-Pipe cleaner (you could also use another straw-shaped candy if you want in place of the pipe cleaner)
-Frosting (You can make your own or use store-bought and just tint it to be the color you want. Here is my favorite frosting recipe)
All the ingredients ready to go! These really are quite easy to assemble.
I first tint my coconut . . . I wanted my frosting and coconut “grass” to be the same color, so I went with green. I put my cup of coconut in a Ziploc bag.
Add about 8-10 drops of food coloring, seal the bag, and shake until the coconut is completely covered.
Next, frost a cupcake.
Add the coconut right after you frost it (it works better if the frosting has not hardened at all). Push the coconut down just barely so that it will stick to the frosting and not all fall off.
Add your jellybeans (or other candy) on top of the coconut. Push the candy down just a little bit so that it stays in place.
Take your pipe cleaner and cut each one in half. Stick one end in either side of the cupcake, making a “handle” for your Easter basket (but don’t carry it by the handle . . . ha ha!).

I’ve made these Easter basket cupcakes before but instead of pipe cleaners I use Twizzlers for the handles. I also use lemon or strawberry cake mix & vanilla frosting that I add red food coloring to make it pink. These are so easy, fun & cute!
