We celebrated my son’s second birthday last week by having the whole family over for a barbecue. I told my husband I was going to make a pasta salad with fruit in it and he thought it sounded pretty terrible. After he tried a few bites of this pasta salad, he was whistling a different tune! 🙂
16 ounces farfalle (bowtie pasta), cooked according to package directions
3/4 cup creamy poppyseed dressing
3/4 cup light mayonnaise
4 green onions, sliced
1 (11 ounce) can mandarin oranges, drained
2 cups fresh strawberries, sliced
Cook pasta as directed on package; drain and set aside until cool. Mix dressing and mayonnaise in a large mixing bowl. Add pasta and onions and mix gently until evenly coated. Fold in oranges and strawberries.
