Reese’s Cookie Ice Cream Pops Recipe

These Reese's Cookie Ice Cream Pops are our favorite way to keep cool, all summer long. They only require a few simple ingredients and taste absolutely amazing.

Reese’s Cookie Ice Cream Pops are the perfect refreshing summer treat. They are so easy to assemble that even the kids can help.  The hardest part is letting them set up in the freezer for 2 hours.

As you can probably tell, our family has a little obsession with anything chocolate and peanut butter. This recipe is so easy to make and tastes absolutely delicious.

We love the chocolate and peanut butter combination. But when you add ice cream to it, and make it the perfect summer dessert, it is even better.

If you are looking for a way to keep cool this summer, these Reese’s Cookie Ice Cream pops are highly recommended.

I love Reese’s Peanut Butter Cups. I firmly believe there is not better food combination than peanut butter and chocolate. It is just so delicious to me.

However, I get it’s not for everyone, and that is just fine. The fun thing about these cookie pops, is that you can make them with really any favorite candy.

Here are a few I highly recommend making these cookie pops with:

  • Kit Kats
  • Snickers
  • Take 5
  • Oreos (with Cookies and Cream ice cream)
  • Milky Ways
  • Butterfinger
  • Andes Mints (with Mint Chocolate Chip ice cream)
  • Heath Bar
  • Brownie bites
  • Cookie dough bites
  • Chocolate chip cookie chunks
  • Fresh fruit (strawberries, blueberries, blackberries, raspberries, etc.)
  • M&M’s
  • Reese’s Pieces

You could really use any favorite sweet treat, or even mix it up and try different flavors of ice cream. We just did vanilla ice cream, and mixed in a few Reese’s Peanut Butter Cups, but really any candy or treat would work great, and taste amazing.

I have tried Oreos with Mint Chocolate Chip ice cream, and it was out of this world, delicious.

  • 1 (12 ounce) bag mini Reese's peanut butter cups
  • 1 (9.5 ounce) bag Chewy Chips Ahoy Cookies with Reese's
  • 1 quart vanilla ice cream (slightly softened)
  • 8 (5 ounce) paper cups
  • 8 popsicle sticks


  1. Unwrap 8 peanut butter cups and cut each one into six pieces.
  2. Break up 4 Chips Ahoy cookies into small pieces.
  3. In the bottom of each cup add in the pieces of peanut butter cups and cookies pieces until the bottom of the cup is covered.
  4. Then add about 2 tablespoons of softened ice cream on top of the peanut butter cups and cookie pieces. Press ice cream down gently with the back of a small spoon or you may need to use your fingers.
  5. Unwrap 8 more mini Reese's peanut butter cups and cut into pieces, and break up 4 cookies to repeat another cookie/candy layer on top of the ice cream.
  6. Add another 2 Tablespoons of ice cream on top of the cookie and candy layer. Gently push the popsicle stick into the center of a whole Chewy Chips Ahoy cookie while on a hard surface, like the counter. Add to the top of the ice cream layer and slide the stick into the cup until it is close to the bottom of the cup.
  7. Place the filled cups on a cookie sheet and freeze for about 2 hours until firm.
