The perfect healthy breakfast or snack: these Protein Blueberry Muffins!
I’m trying to eat healthy, but I still got that sweet tooth. I came across this idea and decided I had to give it a try.
They are amazing. The burst of blueberry juice with every bite is the best part. The other best part, no added sugar.
One of the main ingredients in these muffins is Kodiak Cakes Pancake Mix.
The Kodiak Cakes mix has wheat flour and no bizarre ingredients. These are my new go to. Hope you love em as much as we do.
These make a great snack for the kids, or myself and my husband.
I also send them out the door with these as breakfast, on those busy morning, where there was no time for a sit-down breakfast.
These are simple, delicious, nutritious, and full of fruity flavor that you are going to love.
Ingredients in Protein Blueberry Muffins using Kodiak Cakes Mix:
- 2 bananas, mashed
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup honey
- 2 cups buttermilk Kodiak Cake Pancake Mix
- 1 cup blueberries
Can I use frozen blueberries instead of fresh?
You can use fresh or frozen blueberries, but I have tried both, and definitely recommend fresh. They taste sweeter, and are full of juice.
If you do use frozen blueberries, we recommend thawing them out, then patting them with a paper towel to get rid of excess juice.
If you don’t, it could change the batter colors or ruin the texture of the batter.
How to make Protein Blueberry Muffins:
In a bowl, combine the mashed bananas, eggs, vanilla, honey and Kodiak Pancake Mix.
Fold in 1 cup of blueberries.
Fill each muffin hole about 3/4 of the way full, or with about 1/4 cup of batter.
Bake at 350 degrees for about 12-15 minutes.
Do I need to make these with cupcake liners?
You can use cupcake liners, but I find it easy to just spray the tin with non stick cooking spray, then add 1/4 cup of batter to each hole.
It also depends on the quality of the pan you are using. If you are using an older pan and food tends to stick to the edges of it, we recommend using cupcake liners.

Protein Blueberry Muffins Recipe with Kodiak Cakes Mix
Ingredients

Notes
- I have been able to find Kodiak Cakes mix on Amazon, Target, Costco, and Smiths.
- You can also use the chocolate mix instead of buttermilk for a delicious chocolate variety!
- I have also tried raspberries in place of the blueberries and they were amazing!

How many muffins does this make? 12? Also I saw that someone asked who sells Kodiak pancake mix, my Smith’s and Walmart does too.

Is this recipe meant to have any liquid in it? I found that I had to add water to not have an extremely thick batter. I’ve substituted applesauce for banana with success, and also used a combination of banana and applesauce. Delicious! My toddler devours these and I feel good about giving them to her.

Delicious!!! Instead of all honey, I used half honey half pure mayple syrup, simply because I’m not a huge fan of honey. Oh, i also mixed a little brown sugar and cinnamon and sprinkled on top.
