The perfect healthy breakfast or snack: these Protein Blueberry Muffins!
One of the main ingredients in these muffins is Kodiak Cakes Pancake Mix. The Kodiak Cakes mix has wheat flour and no bizarre ingredients.
These make a great snack for the kids, or myself and my husband. These are simple, delicious, nutritious, and full of fruity flavor with extra protein that you are going to love.
Recipe Ingredient Notes
To make Protein Blueberry Muffins, you will need the following ingredients:
- 2 bananas, mashed
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup honey
- 2 cups buttermilk Kodiak Cake Pancake Mix
- 1 cup blueberries

How to make Protein Blueberry Muffins
- Preheat oven to 350℉.
- Spray a muffin tin with non-stick cooking spray.
- In a bowl, combine the mashed bananas, eggs, vanilla, honey and Kodiak Pancake Mix.
- Fold in 1 cup of blueberries.
- Fold in 1 cup of blueberries.Fill each muffin hole about ¾ of the way full, or with about ¼ cup of batter.
- Bake at 350℉ for about 12-15 minutes.
Storage Suggestions
- Counter & Refrigerator: Place muffins in an airtight container or ziplock bag. Store in the refrigerator for 3 to 4 days. Store on the counter for 1-2 days.
- Freezer: Wrap each muffin individually in foils and place in an airtight freezer bag. Store in the freezer for 1 to 2 months.
- Reheating: Preheat oven to 300°F. Reheat until warm for best results. Or microwave in 30 second increments for 1 to 2 minutes.
Can I use frozen blueberries instead of fresh?
You can use fresh or frozen blueberries, but I have tried both, and definitely, the great option is the fresh ones. They taste sweeter and are full of juice.
If you do use frozen blueberries, we recommend thawing them out, then patting them with a paper towel to get rid of excess juice.
If you don’t, it could change the batter colors or ruin the texture of the batter.
Do I need to make these with cupcake liners?
You can use cupcake liners, but I find it easy to just spray the tin with non stick cooking spray, then add 1/4 cup of batter to each hole.
It also depends on the quality of the pan you are using. If you are using an older pan and food tends to stick to the edges of it, we recommend using cupcake liners.
